‘Huaniu’ apples, easy to have the serious physiological diseases-superficial scald,during the middle or late of cold storage. At present,using the treatment ofdiphenylamine (DPA) and ethoxyquin is the most effective way to restrain superficialscald. But because of food safety issues, its application has been greatly restricted.Therefore, understanding the mechanism of superficial scald of apples, looking for asuitable, effective, low-cost way to solve superficial scald and control measures, is ofgreat significance for promoting the development of Huaniu apple industry healthyand sustainable.1-MCP is one of new ethylene inhibitor discovered in the1990s, isexpected to replace DPA and ethoxyquin to become the best candidate for controllingthe superficial scald antistaling agent. In this paper, different susceptibility tosuperficial scald,‘EAiErHao’ and ‘KaDi’ were choosen as experimental materials.Storaged for eight months(0℃±0.5℃) Dealing with some of experimental materialswith1-MCP (1μl·L-1) The disease rate and disease index of superficial scald of CKand1-MCP treatment group ‘Huaniu’ apples were counted,the ethylene releaserate,respiratory rate, firmness of fruit,soluble solid content,titratable acid content,the content of α-farnesene, conjugated trienes, malondialdehyde (MDA), total phenolsand the activities of polyphenol oxidase (PPO) in peel and pulp were determinedduring the cold storage for8months, and then transferred to room temperature tosimulate market shelf (25℃) for ten days, to understand the mechanism of superficialscald of apples and the control effection and its mechanism of1-MCP treatment on‘Huaniu’ apples.The results showed that:1.‘EAiErHao’ has low sensitivity for superficial scald and the disease rate was6%,‘KaDi’ has high sensitivity for superficial scald the disease rate was77%. Thetreatment of1-MCP can effectively suppress the occurrence of superficial scald. Afterstorage for eight month simulate market shelf for ten days, the disease rate anddisease index of ‘EAiErHao’ and ‘KaDi’ of1-MCP treatment compared with CKgroup was reduced by3%,39%;100%,25.9%, respectively.2.1-MCP treatment can effectively reduce the respiratory rate and ethylene release rate of ‘Huaniu’ apples. After storage for eight month simulate market shelffor ten days, the average respiratory rate, ethylene release rate of ‘EAiErHao’ and‘KaDi’ of1-MCP treatment compared with CK group was reduced by87.15%,84.80%;12.95%,15.82%, respectively.3.In the whole test,α-farnesene, conjugated trienes, malondialdehyde (MDA),total phenols and the activities of polyphenol oxidase (PPO) in peel was significantlyhigher than its pulp(P≤0.01). The average content of α-farnesene, conjugated trienesand malondialdehyde (MDA) and total phenols in peel of ‘EAiErHao’ was the1.63,8.39,4.70,19.63times that of its pulp, the activities of polyphenol oxidase (PPO) was19.17times that of its pulp. The average content of α-farnesene, conjugated trienesand malondialdehyde (MDA) and total phenols in peel of ‘KaDi’ is the2.19、9.09、3.16、18.94times that of its pulp, the activities of polyphenol oxidase (PPO) was9.59times that of its pulp.The more active physiological changes in peel than that in pulprelated to superficial scald may be the reason for superficial scald occurring only inpeel of ‘Huaniu’ apples.4.1-MCP treatment can effectively increased the content of endogenousantioxidantse and reduce the content of α-farnesene, conjugated trienes, in peel of‘Huaniu’ apples. The α-farnesene, conjugated trienes in peel of ‘EAiErHao’ and‘KaDi’ of1-MCP treatment compared with CK group was reduced by37.21%,38.89%;56.63%,78.12%,and the content of endogenous antioxidantse wasincreased14.07%,13.03%,respectively.5.1-MCP treatment can effectively increased the activities of SOD, POD,reduced the production of MDA,H2O2, reduced the activities of PPO, increased totalphenols content in peel of ‘Huaniu’ apples. the activities of SOD,POD in peel of‘EAiErHao’ and ‘KaDi’ of1-MCP treatment compared with CK group was reducedby5.77%,7.21%;44.29%,42.25%and the content of H2O2,MDA was reduced16.09%,19.18%;39.33%,30.37%, the activities of PPO was reduced21.81%,14.55%;the content of total phenols was increased2%,8.1%,respectively.6.1-MCP treatment can effectively keep the firmness of fruit, soluble solidcontent titratable acid content. The average firmness of fruit soluble solid content, titratable acid content of ‘EAiErHao’ and ‘Ka Di’ of1-MCP treatment compared withCK group was increased by24.14%,29.31%;0.8%,0.7%;0.02%,0.02%, respectively.
