Chinese mitten crab is delicious and welcome by market, its cultivation has high economic value, the main cultivation mode is pond cultivation, which is small water ecosystem cultivation, and so in this cultivation mode, cultivates Chinese mitten crab which with high quality has important signification to its cultivation’s developing. This article introduce the breeding of the new Chinese mitten crab cultivar, research its growth performance, measure and analysis its biological indicators, the main findings are as follows:(1) Through4generations directional breeding of purebred Yangtze River Chinese mitten crab, F4generation male crab’s average weight and female crab’s average weight reached156.34g/tail,224.88g/tail, compare to the male and female crab which before breeding work begins, average weight increased by33.96%,64.46%. F4generation male and female crab’s weight specification is neat and unity, weight coefficient of variation less than the male and female crab which before breeding work begins.(2) After6months pond contrast farming, F4generation bred offspring’s one age crab’s average weight, harvest, recapture rate compare to general Yangtze River Chinese mitten crab’s one age crab are no significant differences, but F4generation bred offspring’s one age crab’s sexual precocity rate below general Yangtze River Chinese mitten crab’s and difference extremely significant (P<0.01).(3) After8months pond contrast farming, F4generation bred offspring’s two age crab’s average weight, harvest high than general Yangtze River Chinese mitten crab’s two age crab and difference extremely significant (P<0.01). average weight gain rate, average daily gain higher than general Yangtze River Chinese mitten crab’s and average weight gain rate is differences significant, average daily gain is difference extremely significant (P<0.01). Recapture rate is no significant difference.(4) Under the pond farming conditions, F4generation bred offspring male crab compare to general Yangtze River Chinese mitten crab male crab, muscle weight is no significant difference, F4generation bred offspring male crab’s liver weight, gonad weight, edible part weight,"crab yellow" weight and its proportion of crab’s body are greater than general Yangtze River Chinese mitten crab male crab and differences extremely significant (P<0.01). Under the pond farming conditions, F4generation bred offspring female crab compare to general Yangtze River Chinese mitten crab female crab, muscle weight is no significant difference, F4generation bred offspring female crab’s liver weight, gonad weight, edible part weight,"crab yellow" and "crab paste" weight are greater than general Yangtze River Chinese mitten crab female crab, liver weight,"crab yellow" and "crab paste" weight differences extremely significant (P<0.01), edible part weight difference significant. F4generation bred offspring female crab’s muscle weight, liver weight, edible part weight, muscle index are greater than male crab and differences extremely significant (P<0.01), F4generation bred offspring male crab’s gonad weight, the most delicious part of crab’s body weight, liver index, gonad index, the sum of gonad index and liver index (the most delicious part’s proportion of crab’s body), edible part index are greater than female crab and differences extremely significant (P<0.01).(5) Under the pond farming conditions, under the pond farming conditions, F4generation bred offspring female crab edible part’s nutrition facts except water content higher than male crab, the rest content below the male crab. On the whole, F4generation bred offspring male crab’s nutritional value of food higher than female crab.
