Rice is one of the most important food crops in China, about65%of the population live on rice in China. With the improvement of people’s living standards, there is a growing concern on nutrition quality of rice, taste and development of multi-purpose rice, the research of seed storage proteins as the main nutrition on nutritional quality, processing quality, appearance quality and eating quality is highly valued.Seed protein content of rice is low in cereal crops, which has the great space for improvement in terms of protein content. However, the amino acid composition of rice seed protein in rice is more balanced compared with other crops.for example, some essential amino acids, such as lysine, threonine is high content. And the rice protein is easily digested and absorbed as a high-quality protein. Therefore, it is difficult to find a better exogenous gene as target gene to improve the quality of rice protein by biotechnology.Wild rice is a natural gene pool, and it keeps many good traits and favorable genes which have disappeared in cultivated rice. While these traits that resistance to pests and diseases, tolerance to various stresses and cytoplasmic male sterility have been widely used in wild rice breeding and improvement of modern cultivated rice, but for the study of wild rice in the quality of rice, food processing performance and physiological functionality is rare. Wild rice has some characters which are slender, none-belly white, glassy, hard and not easily broken, it also has a high protein content and lysine content, and many other fine qualities. This is an important method of rice quality breeding. This approach is the use of wild rice resources to develop high-quality rice varieties. To accumulate some base materials for rice quality improvement and diversification of rice breeding, we studied polymorphism of seed storage protein in some wild rice.24populations of wild rice and cultivated rice9311was used as test material, composition of seed storage protein, especially the subunit composition of glutelin as the most nutritious value in these wild rice was carried out a detailed analysis in order to finddifferent proteins or genes in cultivated rice which control the quality of rice, by SDS-PAGE, IEF-PAGE, NR/R analysis,2-DE techniques. The purpose is to provide the basic materials and theoretical basis for rice quality improvement and develop new varieties.The results showed that seed storage proteins in wild rice, especially glutelin subunits, which has a wealth of variation in the content, composition and the structure. Among some wild rice or cultivated rice, the subunit composition of storage protein is very similar, but the accumulation of subunit is significant difference. This studies showed that there is high content of B-type glutelin (GluB), which has high nutritional value, in some wild rice species, and there is some specific proteins in wild rice species, but which do not present in cultivated rice.
