This paper studied on HVEF effects on banana ripening. First screened impact on banana hardness, turn yellow index of HVEF in different ways, further study effects screened appropriate field strength treatment on quality, physiological and biochemical characteristics of banana fruit, the last, by comparing ethephon treatment and HVEF treatment impact on bananas ripe, obtain affect on bananas ripe by the two methods.1.Three kinds of HVEF treatment on fruit ripening bananas have different effects. One time pretreatment on banana ripening is not obvious, neither promote ripening banana fruit, nor can delay fruit ripening bananas; Intermittent treatment can delayed bananas ripening significantly, delaying fruit firmness, reducing the turn yellow index and good fruit is high of the banana during storage; Promoting the decline of banana fruit firmness, good fruit rate decreases rapidly turn yellow index increased rapidly by HVEF treatment continuous, contributed to ripe banana fruit significantly.2.Continuous HVEF to promote the conversion of starch, increased soluble solids, flesh firmness decreased, improves respiration and ethylene peak heights and 5d earlier than the control group. Indicate a continuous HVEF can promote ripe banana fruit, however, different electric field strength treatment on bananas fruits quality have obvious differences. Through three different electric field strength affect the results of the analysis of banana ripening results:-200kv/m> -300kv/m> -100kv/m> CK, -200kv/m is the best field strength treatment.3.Ethephon and HVEF treatment influence on the ripening of bananas after results showed that: ethephon treatment can accelerate ripening banana fruit, starch quickly converted into soluble sugars, increased soluble solids, in short peel turn yellow, but the loss of nutrients Ripening greater sensory score low, short storage period. However after a HVEF of banana fruit, after ripening process small loss of nutrients, sensory scores high, long storage period.
