The test made a 2×2×3×7 factorial design. Storage moisture set two levels of relative humidity 80% and 50%(storage temperature was set to 25℃ uniformly).copper source was set to two levels, which were Copper Sulfate Tribasic Copper chloride and five water. The source of vitamin B2 vitamin B6 and nicotinamide in three kinds, a total of 6 months, respectively at time zero and every 30 days a total of 7 levels, each with 4 replicates. Simultaneous determination of vitamin B2 by high performance liquid chromatography, the content of vitamin B6 and nicotinamide, measured 6 days after sampling set was completed. Without considering the interaction between vitamins, statistical analysis effect of the four factors of vitamin B2, vitamin B6 and nicotinamide stability, and analyze the interaction between them.The results showed that:①The storage time of vitamin B2 had significant effect (P=0.000), the humidity of the storage of vitamin B2 had significant effect (P=0.044), copper source affects the stability of vitamin B2 was not significant (P=0.213), additive sources of vitamin B2 stability significantly (P=0.000), the source of copper and additive interaction affect the stability of vitamin B2 significantly (P=0.014), the interaction of copper resources and time and additive source also the stabilizing influence of vitamin B2 significantly (P=0.000), and time humidity copper sources and additives from the interaction of vitamin B2, affect the stability significantly (P=0.011).②The storage time affect the stability of vitamin B6 was significantly (P=0.000), storage humidity of vitamin B6 stability had a significant effect (P=0.000), copper source affects the stability of vitamin B6 was not significant(P=0.085), the additives affect the stability of vitamin B6 significantly (P=0.000). Sources of copper and additive interaction of vitamin B6 affect the stability of very significant (P=0.001), the interaction of copper source time and additive source affects the stability of vitamin B6 significantly (P=0.001).③The storage time of nicotinamide effect on the stability was significant (P=0.000), storage humidity of nicotinamide stability had a significant effect (P=0.000), copper source affects the stability of nicotinamide was not significant (P=0.092), derived additives affect the stability of nicotinamide significantly (P=0.000), in addition to the influence of humidity copper source additive sources of interaction on the stability of the nicotinamide does not significantly outside, other interaction on stability of nicotinamide effects were significantly (P<0.01).Conclusion: ①Storage time, humidity, additive source, time of copper source and additive source interaction, humidity, time of copper source and additive source interaction influence the stability of vitamin B2 significantly, copper sources had no significant effect on the stability of vitamin B2, the stability of the A vitamin B2 was relatively good. ②The effect of storage humidity on vitamin B2 was not significant,but on vitamin B6 and nicotinamide was significant. ③Storage time, moisture and additives source of nicotinamide stability had a significant effect, the copper source affects the stability of nicotinamide was not significant, in addition to the humidity of copper source and additive source interaction affects the stability of nicotinamide does not significantly outside, the rest interaction affects the stability of nicotinamide were significantly, which the stability of the G of nicotinamide was relatively good.
