It is an important direction of high-quality rice research that carrying out eating quality breeding in China because of the higher demanding of rice palatability. Although the total yield of high-quality rice is small in Yunnan Province, the environments to produce high-quality rice are plenty, thus, which could be screened out the best research site to plant high-quality rice so as to cultivate new varieties with good palatability fast and efficiently by investigating the impacts of different production environments on the changes of traits of rice palatability. In this study, the influence of different planting environments on the changes of rice agronomic characteristics and palatability traits was discussed by analyzing 29 indica rice accessions planted at three different environments. Moreover, the specific primers for amylose content in 302 rice germplasm resources from different sources were analyzed. The results of this research were listed as follows:1. Signficantly differences were detected for five main agronomic characteristics of 29 indica rice accessions which effected by three different planting environments. The similar rate of the characteristics change was about 84.4% between two grown environments Babao and Zhuyuan which all located in the east of Ailao Mountains, and that’s higher than between the previous east areas and Zhefang located in the west of the Mountains which was 65.5% and 58.6%, respectively.2. Analysis of five palatability traits closely related to rice eating quality was found significantly differences for setback viscosity and taste value between Zhefang and the others two planting areas, respectively. The similar rate of the traits change was about 60.3% between two grown environments Babao and Zhefang, and that’s higher than between the previous areas and Zhuyuan which was 32.7% and 51.7%, respectively.3. The maker RMamc10-3 could identify about 51% rice germplasm with low amylose content; the reliable rate to identify rice germplasm with high amylose content of Pul-t3 marker was about 38.9%.4. The amylose content of rice germplasms from Yunnan was relatively low, and more than 70% germplasms was between 5-20%. Out of ten germplasms with over 25% amylase content were detected, all of them collected from IRRI, Myanmar and SriLanka.The research results and all of these germplasms associating with high or low AC would be valuable resources for high-quality rice breeding and quality improvement in the next study.
