The culture of Chinese snacks is both extensive and profound, therefore, the development of the snacks of Fujian province would doubtless help to highlight Fujian’s tourism. However, the English versions of these snacks may vary from one vendor to another without having an authentic and widely acceptable version. Thus Unifying and standardizing the English translations of these snacks become more and more urgent and having no excuses to neglect.Based on the 20 local snacks of Fujian, this paper focus on the translation principles and tactics of Fujian local snacks from the perspective of culture vacancy. The main findings are given as follows:1) The names of the special snacks of Fujian boast strong regional cultural characteristics, which reflects from the geographic location, regional dialects, background allusions and folk culture.2) There are some rules for Fujian local snacks to name themselves, for instance: some are named base on the ingredients; some are named base on the place of origin; some are named base on the metaphorical images; some are named base on the cultural allusions, And there are also some snacks whose names are base on the Fujian dialects. These distinctions, to some extent, would be helpful for translators to translate.3) A great deal of culture vacancy reveals itself in the translation of Fujian local snacks. Only if a comprehensive examination is launched upon those snacks and their cultural background, can we possibly transform the untranslatable to translatable.4) A(?)tain number of translation principles are definitely necessary for snack translation.I(?)his paper, the writer comes up with three of them:Practically delivers the basic information of snacks; Examine the precise relation (false or true) between the name and snack itself, then make an appropriate choice (which title to select and which to discard); Strive to reach ultimate concision and brevity.5) This paper carries out five main translation tactics for the translation of special snacks:tactic 1. direct translation tactic; 2. formulas applying translation tactic.3: combining transliteration with annotation; 3. Attribute takes its function to represent the cooking ways tactic; 4. Substitution methods among similar snacks’translation.This research is in agreement with the trend of overseas publicity of the culture with Chinese characteristics. It also provides the.theoretical and practical reference for the translation research on special snacks of all parts of China.
