Currently, the agriculture production environment is deteriorated by heavy metals with rapid development of China's industrialization and urbanization. The study about heavy metal pollution consider the situation of high occurrence rate of metal pollution events, the of heavy metals element content in wheat main producing areas is not clear, and wheat product company blindly choose raw materials, based on Arc GIS technology do a survey about heavy metal element content distribution of Zhumadian city, Nanyang City, Shangqiu city, Zhoukou City in Henan province, export element content distribution map, then identify the areas that may have potential risk of heavy metal pollution, at last determine the peeling effect on the content of heavy metal elements in wheat flour by studying the distribution of heavy metal elements in parts of the wheat grain.Conclusions are as follows:1. Result of heavy metals content distribution survey in wheat show that all the elements content of wheat grain were exceed the national standards, the higher Cd and As content samples were mainly from Dengzhou area in Nanyang city, high As and Cd content is main factor that impact the quality and safety of wheat research areas, while the higher Cr, Ni content were mainly from the western region of Zhumadian city, we should pay more attention to the area.2. Cr content in wheat grains is mainly distributed in the seed coat and aleurone layer, Cr element distribution trends in wheat grains as aleurone layer > seed coat > embryo> the endosperm.3.Wheat grain after peeled at different gradient peeling rate of Po(0%), P2(2%), P4(4%),P6(6%), P8(8%), P10(10%), P12(12%), when peeling rate of 4% wheat flour decreased significantly Cr element content. When the grain of wheat peeling significantly more than 4%removal of Cr element content in wheat grain, low stripping ratio increase processing wheat flour Cr element content.
