The industry of fermentation takes mechanical stirred reactor generally, and the fermentation of xanthan gum is aerobic fermentation, which means the gas-liquid dispersion is very important, and its broth is high viscous fluid, when the gas ventilating takes a few time, the gas holdup will get saturation, if it continue to take a high gas ventilating, a lot of gas will be not in using and be exhausted, and lots of energy is wasted. For that reason, the author is going to research how the gas holdup will be changed when the ventilation is cut off, after the gas holdup be stable, which involves using photograph method and defining the relative gas holdup, to compare the change of different visousity of syrup, and get the relative gas holdup curve of different viscousity fluid, and proposing 3 representative model of ventilation cutting off which is based on the difference of behavior of different viscoustiy fluidXanthan gum has high viscosity and rheological property of being thinned when shearing, at the same time, the gas-liquid dispersion and mixture is important for the fermentation process of xanthan gum. As for that reason, to use simulation to compare diffent concentration of xanthan, and newtion fluid glecerin of the velocity, the shear strain rate and shear strain stress, the situation of the fluid field, and at the same time to compare the distribution of the gas holdup, and bubble size, the comparison of the gas-liquid dispersion and mixture.According to the mixture tank of experienment, to design the middle scale fermentation tank which is nearly 200L and based on the industrial standard of pressure tank and the requirement of fermentation process, it has determined the basic structure and size of the fermentation tank and the fermentation process and operation platform.
