Black glutinous maize contains active ingredient anthocyanins. Anthocyanins have a high ?O2- scavenging ability and strong antioxidant as well as it has health care function and high nutritional value. Based on this, we extracted and purified proanthocyanidins of black glutinous maize, identified its structure by IR, measured its antibacterial antioxidant capacity and designed black glutinous maize complex grains products, and to provide a theoretical basis to guide the production of factory.The response surface design was applied to analyze the extraction condition, four extraction methods were studied: organic solvent extraction, ultrasonic extraction, microwave extraction and enzyme assisted extraction. The results indicated that the optimum extracting conditions of black glutinous maize OPC were as follows:?1? organic solvent extraction: ethanol concentration 40%, liquid/material ratio 21:1m L/g, extraction time 3h, extraction temperature 56?, the extraction yield was 1.8216 mg/g;?2? ultrasonic extraction: microwave power 240 W, extraction time 21 min, ethanol concentration 42%, liquid/material ratio 25:1 mL/g, the extraction yield was 8.22 mg/g;?3? microwave extraction: ethanol concentration 40%, liquid/material ratio 68:1 m L/g, microwave power 320 W, microwave extraction time 122 s, the extraction yield was 3.4317 mg/g;?4? enzyme assisted extraction: enzyme dosage 2%, digestion time 1h, digestion temperature 40?, digestion pH 5.5, the extraction yield was 6.1771 mg/g. So we concluded that for the extraction yield, the ultrasonic extraction was higher than the enzyme assisted extraction, and the microwave extraction was higher than organic solvent extraction. And for the extraction time, the microwave extraction was quicker than ultrasonic extraction, and ultrasonic extraction was quicker than organic solvent extraction, and enzyme assisted extraction was the last. In summary, ultrasonic extraction for black glutinous maize OPC is ideal. It can guide the production of factory, and fit commercial process.The optimal macroporous resin was NKA-?, adsorption flow rate 2BV/h, adsorption volume 5BV, desorption liquid ethanol concentration 60%, desorption flow rate 2 BV/h, desorption volume 5BV.The IR spectrum of extraction and purification OPC showed that, the structure of OPC has no significantly different using four methods of extraction and purified. The IR spectrum showed that the absorption spectra had OPC characteristic peaks, benzene, phenolic hydroxyl and oxygen-containing heterocyclic. The study of anti-bacterial, antioxidation showed that the concentration of black glutinous maize OPC was correlated with its bacterial inhibition, its antioxidant ability was very high. Its bacterial inhibition and antioxidant ability were higher than rutin.After the determination nutrient content in black glutinous maize and several other grains, according to the nutritional needs of different groups, using stigler used algebraic linear programming algorithm to construct a lowest cost mathematical model, to design a complex grains products formulations of black glutinous maize. And then the composition of the product was analysed,the results show that its protein and selenium are better than that of common corn, which proving that nutrients of black waxy maize is better and that nutrients of composite powder grains is also better. The research of composite grains has important significance on deep processing of black waxy maize. This can be a powerful proof that the research can applied to the industrialized production.
