Cronobacter sakazakii is one of the types of human and animal intestinal parasitic gram-negative bacteria.This bacteria can cause serious diseases,such as neonatal meningitis,necrotizing enterocolitis and bacteremia with high fatality rate.In this study,120 dry seafood samples were collected for contamination investigation.The detection rate of C.sakazakii of 17.83% was observed.Then,the relationship between biofilm forming ability and motility of 23 isolated strains were explored.Results indicated that the No 11 strain had the strongest ability of biofilm formation and relatively stronger motility than most of the isolated strains.Based on previous experiments,the antibacterial activity of chitosan on C.sakazakii and its biofilm with high and low molecular weight was carried out.The findings showed that the low molecular weight chitosan had the better antibacterial effects than high molecular weight chitosan by comparing the minimal inhibitory concentrations(MIC)and antibacterial circle.Subsequently,this paper focused on the effects of different metal ions with different metal concentrations on the antibacterial activity of chitosan.The result showed that 0.3 mol/L calcium ion had the greatest effects showing protective roles of C.sakazakii cell and biofilm.Meanwhile,the optimum time and concentrations of hydrogen peroxide without or with medium on inhibition of C.sakazaii and biofilm were explored.C.Sakazaii were treated by 0.06% hydrogen peroxide for 25 min without medium as well 0.08% hydrogen peroxide for 25 min with medium showed the same results The findings indicated that nutrients can weaken antibacterial effects of hydrogen peroxide.The results provided important basic data to the inhibition of chitosan and hydrogen peroxide for C.sakazakii,and was of great significance to the prevention and control of it in food production.
