Acrylamide(AA)?5-hydroxmethylfurfural(5-HMF)?3-deoxyglucosone(3-DG)and methylglyoxal(MGO)are produced during the heat-treatment of foods and are potentially harmful products and widespread in baked?fried?barbecued foods.In this paper,the kinetics of four kinds of materials under different heating conditions(100?,120?,140?,150? 160?)was studied by constructing a sucrose-amino acid simulation system and the activation energy was calculated by Arrhenius equation;then the effects of amino acids on the production of AA,5-HMF,3-DG,MGO were discussed and analyze the correlation between four kinds of harmful substances in the sucrose-glutamic acid system,the inhibitory effect of exogenous additives on formation of hazards was also further studied.The results showed that after heat treatment,the production of AA?5-HMF?3-DG?MGO were increased with the increase of temperature and time significantly(P<0.05)in the simulation system of sucrose with 3 different amino acids(lysine,proline and glutamic acid).The k value of the reaction rate coefficient is also increased with the increase of temperature.The amino acid species had a significant effect on the four kinds of substances,5-HMF was not produced in lysine and proline system which one only detected in the glutamic acid system,generation of AA,5-HMF and MGO were the highest in the glutamic acid system while 3-DG has the largest quantity in lysine system.According to kinetic equation and Arrhenius equation,the activation energy of four kinds of hazardous substances in different systems were calculated,lysine system:AA 21.2 kJ/mol,3-DG 112.1 kJ/mol,MGO 32.1 kJ/mol;proline system:3-DG 66.7 kJ/mol,glutamic system:AA 174.4 kJ/mol,5-HMF 72.6 kJ/mol,3-DG 41.8 kJ/mol,MGO 25.8 kJ/mol.In glutamic acid-sucrose simulation system,the generation of AA and 5-HMF was positively related to the amount of 3-DG and MGO(R2>0.9),the mechanism of 3-DG and MGO in the formation of AA and 5-HMF precursors was verified.EGCG and resveratrol have inhibitory effects on the four substances with different degrees in simulation system,Within the scope of the experiment,the highest inhibition rate of EGCG on AA?5-HMF?3-DG?MGO is 31.93%?55.16%?45.88%?42.40%;while inhibition rate of resveratrol is 96.11%?89.77%?30.01%?93.02%.
