With the improvement of people's living standard,people pay more attention to the food's nutrition quality,so functional rice become a study hotspot.Rice germ contains rich protein,fat,vitamins and trace elements,however the embryos were milled down in the process of milling rice,the research of high plumule ratio becames a new direction in the functional rice study.This experiment tested the nutrients of embryo-retaining milled rice(xiaolixiang)and general rice 619.The effects on rice quality under different temperatures and different air way were studied.The factors that affect plumule ratio in the process were studied.Finally got a embryo-retaining milled rice products.The nutrients of embryo-retaining milled rice and and ordinary rice were examined.Include:water,protein,fat,vitamin E,mineral elements,amylose,dietary fiber,alpha linolenic acid,linoleic acid,gamma-aminobutyric acid(GABA),found that:compared with ordinary rice,the content of fat in embryo-retaining millede rice is about 2 times content of fat in ordinary rice,the content of vitamin E in embryo-retaining milled rice is 3 times in ordinary rice.And these elements can reach the standard of embryo rice remain and P element beyond the standard rate of 18%.The results were measured with GC.The content of asia oleic acid,alpha linolenic acid and GSH is 19.9±0.3mg/100g,249.8±1.8?g/100g,89.74±1.56mg/100gThe rice embryo as raw material,through the single factor experiments,response surface experiment got rice embryo protein polypeptide DPPH and[E]/[S],hydrolysis temperature,hydrolysis time three factor regression model.Through analysis of rice embryo polypeptide DPPH,the most favourable process conditions is:[E]/[S]2.79%,hydrolysis temperature52.22?,the hydrolysis time 2.1 1h,DPPH61.14%.the best conditions is:[E]/[S]2.5%,hydrolysis temperature55 ?,hydrolysis time2h,under the optimal conditions,has undergone three parallel experiment,DPPH actual measured average of 60.87%.In these three influence factors,the influence of hydrolyzed rice embryo DPPH value from big to small order:hydrolysis temperature>hydrolysis time>[E]/[S].The content of GABA is 4.55±0.12mg/100g in embryo-retaining rice and 1.29±0.05mg/100g in ordinary rice.The effect of GABA with immersion time and the way of cooking was studied.The study found that:the way that rice soaking more time and atmospheric boiled rice porridge is the best way to get up GABA.In order to achieve the commercialization of the embryo of rice,the embryo-retaining milled rice and normal rice with small packaging were storaged in different temperature and different controlled atmosphere.By analyzing the water content,fatty acid content,reducing sugar content,the index trend of off color,it is concluded that low temperature can better maintain the quality of rice,CO2 filling packaging can effectively delay the deterioration of rice quality.
