Dipping lotus root at 40?,50?and 60? hot water to explore the storage period in the best hot water condition.The study shows that hot water treatment can increase the lotus root's quality effectively.Heat treatment could decrease the weight loss,also maintain lotus' s color and hardness,improve chewiness,keep the bacteria away and increase soluble solids content,soluble protein content and the formation of volatile substances,but it reduces the polyphenol oxidase activity and peroxidase activity.But hot water treatment has no significant on adhesion,flexibility and cohesiveness,which may be related to the higher hardness,the more mild temperature and shorten processing time.Dipping in 40? or 50? hot water about half an hour has the best quality.The thesis also found that the polyphenol oxidase activity is lower and change less but peroxidase activity is more higher and flexibility.Therefore,what makes lotus change most is peroxidase instead of polyphenol oxidase.Combine 0.5%,1.0% and 1.5% Calcium Ascorbate(CaAS)with hot water treatment to investigate the effects on storage quality of lotus root.The experiment found that hot water treatment combined with calcium ascorbate makes storage period longer.Heat treatment combined with calcium ascorbate instead of doing heat treatment simply can reduce weight loss rate,and maintain color and hardness of lotus root,inhibit the growth of bacteria,increase soluble solids content and protein content in lotus root,reduce the polyphenol oxidase activity and peroxidase activity,promote the formation of volatile substances.Besides,the lotus experiment with 0.5% CaAS has the best quality.In the research of making lotus root fresh in hot water treatment,it analysis the effects of different amount of protein gel electrophoresis and ascertain the best protein electrophoresis is 20?L.Comparing lotus root's protein,polyphenol oxidase and peroxidase expression before and after heat treatment,we can determine that the best hot water treatment condition,polyphenol oxidase and peroxidase expression increased,total protein increased a molecular weight of about 79.5kDa bands.
