Red pepper seed oil is abundant in linoleic acid with valuable nutritional properties, which can be processed into dietary supplements. The red pepper seed oil extracted and process simulation for the purpose by using supercritical fluid extraction technology were carried out. The extraction kinetics model of red pepper seed oil was established with the differential mass transfer equations, mathematical simulation was carried out by MATLAB, which completed the process of development/utilization for red pepper seed oil and its process simulation. This thesis studied on extraction industrialization of red pepper seed oil to provide technical and theoretical support, which is of important significance to solve the waste of resources and adjust the agricultural structure.The pepper seeds as raw material, study on influence extraction pressure, extraction temperature and extraction time on extraction yield of pepper seed oil and the optimal conditions were obtained. The fatty acids in the seed oil were detected by gas chromatography-flame ionization detection ?GC-FID?. Numerical simulation mainly focused on the maximum extraction yield by experiments as indicators of simulation, established the hypothesis of extraction process with partial differential equation, and acquired the equation by simplifing equation and setting boundary conditions. Simulate the extraction yields of total oil, unsaturated fatty acid, linoleic acid and palmitic acid with extraction time and extractor bed height.3-D simulation was used to express the relationship among the extraction yields, extraction time and extractor bed height. The experimental data were compared with the simulation results, which showed that they were in good agreement and verified the accuracy of the models. On the other hand, the extraction yields of dynamic equation for the pepper seed oil, unsaturated fatty acid, linoleic acid and palmitic acid were obtained, which would provide certain theoretical guidance for industrialized utilization of extraction of red pepper seed oil. The main results are as follows:The above experimental results showed that the optimum conditions of red pepper seed oil by supercritical CO2 extraction were 30MPa,40 ? and 90 minutes, extraction yield got to 15.36%; mainly contained palmitic acid, stearic acid, oleic acid, linoleic acid and a small amount of linolenic acid. Simulated the relationships of the extraction yields of total oil ?Xe1?, total unsaturated fatty acids ?Xe2?, linoleic acid?Xe3? and palmitic acid?Xe4?with extraction time?t? and extractor height?z?, and obtained their expressions; Comparsed with solvent method, ultrasonic assisted, soxhlet and supercritical CO2 extraction of red pepper seed oil on the physical and chemical analysis, supercritical CO2 extraction of red pepper seed oil quality and extraction yield are the best.
