Blueberry contains rich nutrient element especially anthocyanin,which provides many kinds of healthcare functions.Blueberry pomace still contains rich anthocyanins after blueberry being processed into juice.If the pomace is discarded,which may lead to a great resources waste and environment pollution.In this paper,blueberry pomace was used as raw material,the extraction,purification,stability and antioxidant activity were researched,and blueberry chewable tablets were devoloped.The aim was to make comprehensive utilization of blueberry pomace and increase the added value of blueberry juice processing industry.The contents and results were as follows:(1)Optimization of ultrasonic-assisted extraction of anthocyanin in blueberry pomaceThe ultrasonic-assisted extractionwas applied to extract the anthocyanin in blueberry pomace.The optimum conditions of anthocyanins were optimized with the single factor and the response surface method.The results showed that the optimum extraction process was as following:the concentration of ethanol 65%,pH3.0,the ratio of material to solution 1:70,ultrasonic power 500 W,extraction time 20 min,extraction temperature 50 ?,the extraction ratio of anthocyanin was 83.638%under the conditions.(2)Purification of anthocyanin in blueberry pomace by macroporous resinThe purification effect of AB-8 and D101 to anthocyanin was compared,and the optimal adsorption and desorption conditions of AB-8 to anthocyanins were studied.The results showed that the purification effect of AB-8 was better,the optimum conditions were as following:the adsorbent temperature 60?,the sample concentration 2 mg/mL,the pH of solution 3.0,the adsorptive stripping rate 1 mL/min,the concentration of desorption solution 60%,the pH of desorption solution 3.0,the desorptive stripping rate 1 mL/min.The color value was 16.900 and the purity was 64.275%under the conditions.(3)Stability and antioxidant activityof anthocyanin in blueberry pomaceThe effects of pH,temperature,beam,ascorbic acid,sucrose,glucose,sodium benzoate,metalions on the stability of purified anthocyanin were studied.The antioxidant activity of purified anthocyaninincluding reduction ability on Fe3+,DPPH radical scavenging ability,·OH radical scavenging ability and lipid peroxidation inhibiting activity was evaluated by comparing with ascorbic acid.The results showed that the anthocyanin was stable under the acidic condition,the low temperature and the protection from light,and it easyly degraded under light and high temperature.The ascorbic acid showed a dualityto the stability of anthocyanin,its stability increased at a lower concentration,and its stability reduced at a higher concentration.The sucrose,glucose and sodium benzoate had little effect on its stability.The metal ions of Na+,Zn2+,Ca2+;K+ had less effect on its stability,the metal ions of Cu2+ and Fe2+ had great influence on the stability of anthocyanin,the biggest effect of metal ions was Fe3+.The result displayed that the antioxidant activity of purified anthocyaninwas higher than ascorbic acid,the antioxidant activity increased with the increasing concentration of anthocyanin.(4)Development of blueberry chewable tabletsDuring the experiment,the purified anthocyanin and hawthorn powderwere used as raw materials,the best formula was obtained by single factor and orthogonal test,and quality of products was inspected.The results showed that the best formula of chewable tablets wasas following:anthocyanin content 50 mg/g,added hawthorn powdercontent 50%,mannitol to lactose ratio 3:1,sorbitol content6%,CMS-Na content 4%,ethanol concentration 60%,magnesium stearate contentl%.Under the process,the products were purple,smooth surface,uniform color,sweet and sour taste.The tablet weight was 0.7±0.038 g,hardness was 7496 g,chewiness was 630.70 mJ,cohesion of the elastic was 21.07 mm,the anthocyanin content of each tablet was 17.763 mg.
