Mytilus edulis possess the activity of antioxidant,anti-tumor and immune and so on.To play a better role of the activity of MEPS,not only to study the optimization of the extraction of MEPS,but also to study the the activity of MEPS.Basis on this results,the study on development and application in food field by using MEPS provide to the basis of theory and the guidance of practice.To extract MEPS by single enzyme(papain protease,neutral protease,alkaline protease)and combined enzyme(papain-neutral protease,papain-alkaline protease)in the paper.To compare the best extraction conditions for different enzymes.The results show that compared with the extraction of single enzyme,the extraction of combined enzyme is better.And the highest extraction is papain-alkaline protease.The best available data of papain combined with alkaline protease was as follows: the Optimal dosage of enzyme is 1%,the radio of raw material to solvent is 1:20 g/ml,the pH of Papain’s cushion fluid is 7,the pH of alkaline protease’s cushion fluid is 10 and the extraction temperature is 50℃,the rate of extraction is 7.27%.To study the activity of antioxidant and immune of MEPS.And to determine the rate of DPPH free radical clearance,reducing power and hydroxyl free radical clearance of immunosuppression is set up,comparing the level of IL-2,IL-4,IL-10,the TNF-α,SOD,GSH in mice serum effected by MEPS.Experiments show that the rate of DPPH free radical clearance,reducing power and hydroxyl free radical clearance of MEPS from the different extract condition of enzymes is different.And the activity of antioxidant is the polysaccharide extracted by papaya-alkaline protease.At the same time,the study show IL-2,IL-4,IL-10,TNF-α,SOD,MDA,GSH of mice serum increased with the increase of polysaccharide concentrations,and MDA of mice serum descend with the increase of polysaccharide concentrations.It suggests MEPS can adjust immune and antioxidant.On this basis,to develop the biscuits and milk powder made of MEPS.To make the single factor experiments for the dosage of MEPS,the dosage of sugar,the dosage of cream and baking time.And to detect the evaluation of sense and quality.To analysis thesingle factor experiments for the dosage of MEPS,the dosage of β-cyclodextrins,the dosage of lactose by the evaluation of sensory,quality,the solubility of milk powder and the water content.The study found the formula for biscuits is the content of polysaccharide is 0.05 g,the content of sugar is 20%,the content of cream is 20%,and the curing time is 9min.The best formula of milk powder is add MEPS to 20%,adding β-cyclodextrin amount 0.06%.when the content of lactose is 0.1%,the milk powder is most appropriate.This condition of formulate cookies and milk powder more in line with public taste.
