Mature vinegars are one of the four famous vinegars in China,and are also the common seasoning of daily life.Vinegars adulteration has seriously affected the reputation of mature vinegars,damaging the legitimate rights and interests of consumers.The traditional detection method for the quality of vinegars used in vinegars factory is time-consuming,and it is of low detection efficiency that it can not achieve real-time detection.Based on visible/near infrared spectroscopy,machine vision and information fusion,a quantitative analysis of the quality of mature vinegars and a qualitative analysis of the brand of mature vinegars were made in this paper combined with chemometrics method.A real-time detection scheme for vinegar quality was worked out The main work of this paper is as follows:(1)a mature vinegar quality detection system based on spectral information and another based on image information were established;(2)based on the spectral information detection system,firstly,the transmission spectra of mature vinegars samples were collected at different optical paths and different flow rates.Secondly,the best optical path,the best pretreatment method and the optimal flow rate were determined using PLSR quantitative analysis method.Then,under the optimal conditions,the comparative analysis of the model effects on the mature vinegars quality using PLSR and BP neural network was carried out.Finally,the discriminant analysis was used to identify the different brands of mature vinegars;(3)based on the image information detection system,firstly,the image of mature vinegars samples were collected after the vinegars samples had diffused on the filter paper from which color information and area information were taken.Secondly,an analysis model of color information and an analysis model of color & area information for mature vinegars quality were established using PLSR and BP neural network;then,a comparative analysis of the two models was made.Finally,a discriminant analysis for mature vinegars quality were made using different training parameters;(4)for the spectral and image information fusion,firstly,a comparative analysis of mature vinegars quality model of spectral information and of image information was made;The,the comparative analysis of mature vinegars quality quantitative models of different information fusion and the above optimal model.Finally,a comparative analysis of mature vinegars quality qualitative model of different information fusion was made;(5)development programs of variable light path regulation and vinegar quality real-time detection...
