With the improvement of people's living standard and income growth,for the food quality,people's requirements and concers are also increasing,food safety issue are referred to the important position.At the same time,the edible oils quality are also has been paid more and more attention.However,the gutter oil back to the table is getting more and more surious problem.The source of gutter oil is very wide and the composition is very complex,this kind of gutter oil cotain many hazardous subatances and can not be removed completely.And now our country's detection of gutter oil is still in the explotrtory stage and did not form a complete detection system.In addition,the detection means are also more cumbersome.Hence,in this research,based the total reflection infrared spectrum for the rapid identification of adulterated edible oil has done a series of test.First,use the discriminant analysis?DA?to identified the edible oil adulteration,firstly,use all the different kinds of refined edible oil as the research object and analyse them,built the original classfication model.Secondly,select the unknown samples to verify its accuracy.Then the swill oil according to a certain proportion into the refined edible oil,and mix the refined edible oil,use the DA to analysis them.At the same time,combined the gas chromatography?GC?,analysis the fatty acid composition of refined edible oil and swill oil in order to explain the phenomenon of the classification model.The result shows that bulit the classficattion model in the 3100-2800 1700-1500cm-1 is the best,in accordance with the all kinds of oil's double molar classification result of use the GC method.In the verification test,the refined edible oil's recognition rate of 100%,adulterated oils identification test,identification of sunflower oil,soybean oil,peanut oil,sesame oil and lard,Rapeseed Oil rate was 100%.Refined oil mixed in the test,the minimum detection line of sesame oil,camellia oil and peanut oil were 3%,0%,0%.Inshort,thetotalreflection infraredspectrum combined with DA method in the identification of Adulterated Edible oil is a kind of simple and feasible technology method.Secondly,based on the ATR-FTIR combined the Back interval partial least squares?Bi-PLS?method to determiate the peroxide value?PV?in the edible oils.Firstly,collect the adulterated oils'spectrum,then use the spectrum preprossing methods and Bi-PLS to carry on the optimization model.The result showed that when use the Bi-PLS original model combined the standard nomal variate?SNV?method to determinate the PV in the edible oils,the model performance is the best,and the corresponding combination spectrum interval is 3100-2800,1800-1600,1500-800cm-1 and obtained the good prediction results,and the value of R2,RMSEC,RMSECV,RMSEP was 0.9886,0.605,0.86 and 0.713.Then based on the ATR-FTIR method to compared the interval partial least squares?i-PLS?,forward interval partial least squares?Fi-PLS?in determinate the iodine value?IV?in the adulteration edible oil.Through the comparison of the i-PLS,Fi-PLS and Bi-PLS three kinds of band selection method,to determine the optimal method.In order to establishthe optimal modelof determinationof iodinevalue of adulteration edible oil.The result showed that compared the iPLS and Fi-PLS,the Bi-PLS model has the bettr model performance.It R2 was0.9886,RMSEC and RMESP were respectively 2.70 and 2.81,the concerd interval was 4000-3500,3000-2900,2800-2400,2000-1800,1700-1100?1000-900 cm-1.The Fi-PLS model was the second best model,it R2 was 0.9877,RMSEC and RMESP were respectively 2.80 and3.17.In summary,in this study based on the ATR-FTIR combined the DA,i-PLS,Fi-PLS and Bi-PLS methods used in the rapid identification of adulteration in edible oil.To establish and improve the detection methods of edible oil adulteration.Research has great practical significance for comprehensive detection of edible oil adulteration,and To provide a theoretical basis and method reference for the rapid identification of adulterated edible oil.
