Black rice pericarp and seed coat is rich in natural anthocyanin compounds with the effects on regulating lipids and protecting liver.The article use "Fuzi 60" black rice which bred by the task group with high anthocyanin content as raw material,mixing other agricultural products that has effect on lowering blood,and extrusion technology invented compound instant rice that has effect on lowering blood fat and protecting liver.This article would tell the optimization of the production conditions of the compound instant rice by response surface.And also this article measured the physical chemical indicators and the taste quality of the compound instant rice and researched the effect on blood lipid and the protection function of lipid tissue in hyperlipidemia rats.From the article,the following conclusions were obtained.1.On the basis of the single factor experiment,the optimal process of the compound instant rice is:the barrel temperature is 118?,26%water and the screw speed 127r/min according to the response surface.Rehydration ratio of product according to the process parameters was 258%,and it was basically consistent with the prediction.2.The physical chemical indicators and the taste quality of compound instant rice was researched under the optimum conditions using the traditional instant rice as a reference.(1)The conclusion is that the content of amylose,the consistency of gelatin and the water absorption index and water solubility index increased significantly after the extrusion.(2)The traditional instant rice has lower hardness,elasticity and chewiness but higher viscosity under the same rehydration time.The compound instant rice has higher sensory evaluation comparing with the traditional instant rice.3.This article also researched the effects of compound instant rice on blood lipid levels in hyperlipidemia rats,the results showed that:(1)After 8 weeks of feeding,the compound instant rice significantly decreased the weight and food intake of rats comparing with the model group.(2)TC,TG and LDL-C in serum decreased by 28.57%,32.05%and 14.51%respectively.HDL C increased by 34.28%.4.At last,this article researched the protective effect of compound instant food rice on liver tissue of hyperlipidemia rats,the results showed that:(1)After 8 weeks of feeding,the compound instant rice has significant decrease effect on the ratio of atherosclerosis index,fat and liver index by 57.18%,22.83%and 23.10%,respectively comparing with the model group.(2)The compound instant rice decreased the content of TC,TG and LDL-C in the liver by 71.45%,58.13%and 52.80%respectively.(3)After 8 weeks of feeding,the compound instant rice also reduced serum liver enzyme ALT(alanine aminotransferase)and AST(aspartate aminotransferase)activity by 41.39%and 27.43%.(4)The histopathological observation showed that,the lipid degeneration and necrosis of hepatic cell were noticeable,vacuolization was formed by most of fat droplet,and all of these suggested fatty rats model was formed.The lipid degeneration of the positive group was slight comparing with the model group.The hepatic cell of the compound instant rice were in alignment,the lipid degeneration and vacuolization were not found.The morphology of liver in compound instant food rice group was close to the normal group,better than the positive group.The compound instant rice can improve fatty degeneration in liver.
