This project,proso millet is used as main raw material for fermentation with homemade koji.The single factor test and orthogonal experiment of saccharification process were done by four aspects,the ratio of material to water,the added amount of homemade koji,the temperature of saccharification,the time of saccharification.The single factor test and orthogonal experiment of fermentation process were done by three aspects,added amount of white spirit,the temperature of fermentation,the time of fermentation.The review indicatoes for pastoral LaoZao was judged by alcohol degree,reducing suger,total suger,acidity(pH value).The best process of traditional pastoral LaoZao was established.And The single factor tests were done by the added amount of oat and the added amount of corn.The review indicatoes for oaten LaoZao and zeistic LaoZao was judged by alcohol degree,reducing suger,total suger,acidity(pH value).The best process of oaten LaoZao and zeistic LaoZao was established.The amino acid composition in three kinds of pastoral LaoZao were measured.The flavoring components of three kinds of pastoral LaoZao were extacted by head-space solid phase microextraction coupled with GC-MS.The main conclusions as follows:The best process of traditional pastoral LaoZao was done by the single factor test and orthogonal experiment:the ratio of material to water is 1:2,the added amount of nomemade koji is 10%,the temperature of saccharification is 40?,the time of saccharification.is 48h,added amount of white spirit is 10%,the temperature of fermentation is 30 ?,the time of fermentation is 3 days.Based on best process of traditional pastoral LaoZao,the porprotion of oat and proso millet is 3:7.porprotion of corn and proso millet is 4:6.In 4?,traditional pastoral LaoZao could be preserved 19 weeks.In 25?,traditional pastoral LaoZao could be preserved 13 weeks.In 4 ?,oaten LaoZao could be preserved 17 weeks.In 25?,oaten LaoZao could be preserved 9 weeks.In 4?,zeistic LaoZao could be preserved 17 weeks.In 25?,zeistic LaoZao could be preserved 11 weeks.The results of amino acids in three kinds of pastoral LaoZao were determined.There are 17 kinds of common amino acids,including 7 kinds of essential amino-acid for human body the amino-acid conten in oaten LaoZao is highist,Alanine conten in zeistic LaoZao is highist,Leucine conten,Argining conten,Proline conten in traditional pastoral LaoZao is highist.There are 20 kinds of volatile compounds in traditional pastoral LaoZao,and 17 kinds of volatile compounds in oaten LaoZao,and 13 kinds of volatile compounds in zeistic LaoZao.The relative flavor components were Ester,alcohol and acid.
