This study carried out the basic research on the extracting and process of ?-acid in granular hops.Through single factor test and orthogonal test,the optimal extraction process parameters of ultrasound assisted extraction of ?-acid were determined.On the basis of above,the corrosion resistance of ?-acid was tested.This paper aims to provide a theoretical basis for the development of green security,efficiency and low toxicity of natural preservatives,and it also aims to provide a basis and reference for related business.And provide some technical reference for the medicinal value of ?-acid.The main results obtained are as follows:1.The optimum parameters of ultrasonic assisted extraction technologic condition of ?-acid were confirmed by the single factor and orthogonal experiments,the results showed that:the best combination of ultrasonic assisted extraction technologic of ?-acid was A2B3C3D2,that was the ratio of solid to liquid 1:10(g:mL),ultrasonic time 15 min,ultrasonic power 200W,soaking time 60min,and the order of factors were the ratio of solid to liquid>ultrasonic time>ultrasonic power>soaking time.Under that condition,the content of a-acid was 16.37%.2.The extracted ?-acid was applied to tofu and determine the corrosion resistance.Mainly to determine the changes in the indicators of tofu during the storage period,including the total number of colonies,texture characteristics,conductivity,pH and so on.And during the storage period,the tofu was stratified and then determine the total number of colonies per layer,next analyzing the permeability of ?-acids on tofu.The results obtained are as follows:The ?-acid is used in tofu is effectively extended for compared to the blank sample,and extended for compared with samples that had been soaked with preservatives.Adding the ?-acid to the tofu in different ways,the tofu is stratified during the storage period,and the total number of colonies per layer is measured.lt is found to be permeable and can play a preservative effect on tofu compared with the blank sample.From the above results,it is believed that the extracting process of ?-acids could be improved and optimized through orthogonal experiments.And it has anti-corrosion on tofu.
