Aggregate is a traditional meat by-products,rich nutrition factor is a major concern.Our country's livestock and poultry production and consumption power,according to the national bureau of statistics data released by the meat production in China in 2011,79.5 million tons,produce countless bones,accounts for about a quarter of the world's total output of meat,first in the world.Although the bone resources of our country is very rich,but because people lack of understanding of the value of bone for quite a long time,think bone nutrition value is less than the meat,and low prices,bone storage inconvenience,old ideas hindering the development and utilization of livestock and poultry bones.Selenium,known as the "longevity element",has a disease,cancer,cancer,enhance immunity,etc.More than 30 years,numerous studies have demonstrated that cardiovascular disease,&disease,gastrointestinal,liver cancer and so on more than 40 diseases are associated with human selenium deficiency.Fish shuitangba is one of the most typical high selenium area in enshi,the north of the selenium-rich carbonaceous strata in the is usually considered a fishing shuitangba inside the main source of selenium.Yang guang qi,Song Chengzu Permian in northern fishing shuitangba and brussel mouth group carbonaceous siliceous rock section collected containing selenium is as high as 84123 mg/kg,6471 mg/kg and 8390 mg/kg of stone coal and carbonaceous siliceous rock samples.So enshi is added in the poultry feed fish shuitangba high levels of selenium mineral powder and corn,the poultry bone contain high levels of selenium element,as the subject development of poultry bone as raw material of function series products offer conditions.Aimed at problems described in this paper,based on the principle of food science,research on poultry bone three aspects.(1)fermentation bone cement poultry bone to add rich selenium mineral powder as the research object,explores multi-strain fermentation coupled mud,selection of the aspergillus oryzae inoculation quantity was 0.4%,38 ? at the early stage of the fermentation,fermentation in the early time of 48 h,143.7 U/g,and obtain higher protease control leaven early after temperature 30 ?,the fermentation time of 72 h,26 ? the temperature at the late leaven leaven late time after 48 h,using yeast bacterium agent adding quantity corus:L-rhamnose coli = 1:2 effect of mixing ratio,get rich in hydroxyproline(>12 mg/kg),high active calcium(>435 mg/100 g),collagen(>30 g/kg),calcium and phosphorus ratio(1:1-1.5)moderate,rich chromium(>0.02 mg/kg)of the functional fermented bone cement paste products.(2)the bone cement grain cookies research:to add to the rich selenium mineral powder poultry aggregate as the research object,first using the dough to wake the experiment of pretreatment,to determine the activity of dry yeast,dough up hair,dough temperature wake time,percentage of bone powder adding quantity on the dough and the effect of final dry active yeast 1 g,dough up hair temperature 30 ?,dough wake time 30 min,bone powder adding quantity 10%;Controlled by variable temperature baking technology,its surface fire 220 ?,170 ? primer,accelerate the Michael reaction,control temperature 155 ? for 11.5 min,efficient keep function of active ingredients in poultry bone putty powder,the selection of room temperature nondestructive drying equipment,control the temperature of 55 ?,in 8 minutes faster form rich in collagen,total selenium content(37.8 mg/100g)distinct flavor,exquisite and smooth homogeneous bone cement grain crackers.(3)bone cement research:to add to the rich selenium ores in poultry aggregate as the research object,through high pressure dissolving technology processing,through the pressure,time and temperature effects on bone powder particle size,final meal size 180 mesh ultramicro bone powder;By adding a certain amount of water,vitamin C,sugar ester,such as soybean protein isolated,maltodextrin,heated to a temperature of 60 ?,stir well,spray drying to obtain microcapsule bone cement powder;With microcapsule bone cement powder as raw material,determine the dextrin powder 15%,sugar 25%,magnesium stearate and talcum powder 2.3 g,1.0 g of microcapsule bone putty powder buccal tablet of sensory impact,hydroxyproline and bone calcium content.Final is rich in calcium(6.548 mg/g),bone hydroxyproline(15.58 mg/kg),collagen protein peptide(2.03%),palate soft,colour and lustre is uniform,soft hard moderate high values of buccal tablet.
