With the people on meat consumption increased,production of poultry bone are also on the increase.The current lack of awareness of the poultry bone,bone makes a lot of birds is wasted or processed into low value-added products,which greatly hindered the utilization of poultry products.Actually,vertebrate bones contain more nutrients,especially rich are Ca2 +,P content close to the body of the Ca/P ratio 2,are easier to digestion and absorption of human body.In recent years,The rabbit is a kind of vertebrates,,people for rabbit meat consumption increase gradually,but the rabbit’s utilization rate is extremely low,investigate its reason,is because the rabbit bone hardness,not easy processing,and utilization rate of coarse crushing dissolution of calcium also very few.Of rabbit bone process,therefore,make its ground into superfine powder is important step to improve the utilization ratio of the rabbit.In this paper,by comparing the rabbit bone particle size after different before treatment and the change of the basic nutrients,select one of those before treatment,and then optimized by single factor experiment preparation technology of the super rabbit bone.The different size of rabbit bone of the chemical structure,the surface structure,the composition and content of the amino acid and the content of ca2+ and in vitro simulation experiment comparison so as to obtain the advantage of the super rabbit bone,then the super rabbit bone made high calcium and rabbit meat ham,not only contain bone fragrance,also contain rich calcium,can be used as a calcium products.The main research is as follows:1.The rabbit bone contains abundant nutrients,such as protein and mineral elements,among them the content of calcium and phosphorus is particularly rich,and Ca/P ratio is close to the human body the Ca/P ratio is 2,and are easier to digestion and absorption of the human body,and also contains of 7 essential amino acid for human and 10 kinds of essential amino acid,in addition,the rabbit bone also contains many trace elements,such as Fe,Cu,Mn,zinc,etc.,the content of these trace elements is higher than in the meat products.Also found different ways to deal with rabbit bone nutrients.2.The rabbit bone after different pretreatment under the charge of the same with the planetary ball mill ball mill 3 h,found that after high temperature and high pressure with enzyme treatment group rabbit bone size(12.4 microns)obviously smaller than that of high temperature and high pressure(118.3 microns)and atmospheric pressure groups(73.9 microns),so choose high temperature and high pressure with enzyme as super rabbit bone of pretreatment process.Through single factor experiment,the optimum process of preparation of ultrafine rabbit bone is: the ball mill time 3 h,charge 10 g,the speed of 500 r/min,the minimum under the condition of the average diameter of 10.203 microns.3.The super rabbit bone(d)and the different mash rabbit bone(a,b,c)the comparison of the physicochemical properties,the superfine rabbit bone(d)of the chemical structure and the chemical structure of a,b,c,same in phosphate and carbonate reservoirs.4.Superfine rabbit bone surface structure is relatively uniform no obvious edges;Superfine rabbit bone of ca2 + content(151.89 ug/g),significantly higher than group a,b,c;Simulated gastric juice and intestinal juice in vitro experiment,the superfine rabbit bone at 0 h can dissolve out large amounts of calcium ions,respectively is 1.413 mg/g and 2.02 mg/g,content is much higher than group a,b,c.5.By single factor and Box-Behnken design and response surface analysis of high calcium rabbit mi gel technology optimization,get the optimal process conditions for the moisture content is 44.73%,the bone powder adding quantity 15.7%,starch 8.6%,under the condition of the process to get the actual gel strength was 9080.48 g.m.,sensory score the actual value is 66.32.And get the gel strength and sensory score factors quadratic equation model of the variables,the regression model,the test fitting is good.
