Garlic is an Asian country and in China are used for thousands of years of history of condiments,it is in addition to the ability to kill bacteria and high nutritional value by the Chinese family's favorite.Seaweed-rich garlic is a high-nutritional value of garlic in recent years.The aim of this study is to enrich the selenium-rich garlic,the nutrient,antioxidant activity and the ability to inhibit AGEs in selenium-rich garlic Selenium garlic and so on,to explore the advantages of selenium germination garlic and application prospects,the main research content and conclusions are as follows:1)First,the conditions of germination and selenium germination of garlic were optimized from the three conditions of sodium selenite concentration,temperature and humidity.The optimum culture conditions of selenium selenite concentration of 2?g L,temperature of 25 ?and humidity of 40% were found.Garlic nutritional value of the experiment,selenium-rich garlic garlic content of 0.32 mg/g for the highest in each group.In the total phenol content,selenium-rich germination garlic content of 3.38 mg/g for the lowest in each group.The results showed that the content of total flavonoids in selenium-rich garlic reached 0.74 mg/g,which was the highest in each group.The soluble sugar content of selenium-rich garlic was 42 mg/g,and the soluble sugar content of selenium-rich garlic was 35 mg/g,which was lower than that of selenium-rich garlic.Therefore,the most important nutrients in garlic garlic content of selenium germination of garlic is the highest,some of which are the highest antioxidant,comprehensive selenium germination garlic nutritional value is relatively high.2)The antioxidant activity of garlic was tested.The activity of SOD was increased by 22 U/mL after selenium enrichment,and the activity of SOD was decreased after germination with selenium-rich garlic.Garlic SOD activity was 21.61 U/mL,SOD activity in each group were relatively average.The FRAP of selenium-enriched garlic was 0.143 mmolFe2+/g,and FRAP reduction was not the highest in each group,which was about 80% higher than that of common garlic,which was 10% lower than that of selenium-rich garlic.In the DPPH free radical scavenging capacity,selenium germination of garlic is 82.6%,compared with ordinary garlic has 3 times the increase,compared to selenium-rich garlic has nearly 1.5 times higher.Sprout garlic compared to ordinary garlic hydroxyl radical scavenging rate increased slightly,selenium-rich garlic compared to ordinary garlic increased by nearly 1.8 times,while selenium-rich garlic compared to selenium-rich garlic and nearly 1.2 times the growth rate reached 78.2% Selenium germination garlic hydroxyl free radical scavenging capacity for each group the highest,comprehensive,selenium germination garlic antioxidant ability is stronger than ordinary garlic is stronger than selenium-rich garlic3)The results of inhibition of AGEs by garlic,germinated garlic,selenium-enriched garlic and selenium-rich garlic showed that the inhibitory effects of garlic on butanedione were similar,and the inhibitory effect was weak.Selenium-sprouting garlic on the inhibition of acetaldehyde and glyoxal the best,four groups of garlic on the inhibition of pyruvate are generally,selenium germination garlic glyphosate inhibition effect is about 6 times the selenium-rich garlic,also Far higher than other groups.The inhibitory effect of garlicin on Carbonyl compounds showed that allicin was not the main component of Carbonyl compounds inhibition in garlic.The inhibitory effect of selenium-enriched garlic on glyoxal was highest because the total flavonoids in garlic were the highest in each group,On the inhibition of glyoxal,so selenium germination garlic glycyrrhizinate inhibition of the best.Selenium germination garlic and germination of garlic on the formation of the best inhibition of AGEs,and selenium-rich garlic and ordinary garlic to inhibit the effect of gluten in general.May be due to selenium germination of garlic in the cysteine material than the selenium-rich garlic and garlic and more common in the glycosylation reaction with the Amdeli product,give priority to occupy the Maillard reaction cross-linking sites,Leading to the cross-linking of AGEs with lysine or its primary product can not be effectively carried out,thereby inhibiting the cross-linked product of AGEs production.
