Powder fat,alias dairy creamer,creamer,is the fat as the core material,carbohydrates,protein,plastic and other wall materials,the use of microcapsule technology,emulsified by emulsification,high pressure homogenization,spray drying made Powder or granular products.Butter fatty acid composition is reasonable,high nutritional value,the development of butter powder oil products have a good market prospects.In this paper,soybean oil as the core material,soybean protein isolate,maltodextrin,glucose syrup and glue as the main wall material,the use of anionic emulsifier and non-ionic emulsifier compound,the fuel load of 50%,55% 60% butter oil and oil raw materials and dosage,emulsification,homogenization and spray drying conditions and finished product antioxidant,heavy metal content and ultrastructure were studied,made of good emulsification stability,good water and dispersibility,Long shelf life of tallow oil powder products.The main findings are as follows:1.Base oil powder base oil formula(MD/chitosan,glucose syrup,Hi-cap 100),protein(sodium caseinate,SPI,WPI),gum(Xanthan gum,guar gum,gum arabic,CMC),Through the single factor and orthogonal test,to determine the best composition.50% butter oil powder base formula: MD and glucose syrup ratio of 4: 1,the amount of 65%,SPI dosage of 3.0%,the amount of acacia 3.0%;55% butter oil fat base formula: MD and glucose syrup ratio 5:1,SPI dosage of 4.0%,the amount of acacia 2.0%;60% butter oil base formula: MD and glucose syrup ratio of 5: 1,SPI dosage of 3.0%,the amount of Arabic glue 5.0%.In addition,different fuel consumption formula to add the appropriate amount of dipotassium hydrogen phosphate,sodium tripolyphosphate anti-caking agent.2.Emulsifier type and dosageThe optimum composition of the nonionic emulsifier(GMS,PGFE,Span 60)and anionic emulsifier(CITREM,DATEM,SSL)were studied by single factor and response surface Box-Behnken design.The composition and dosage of the emulsifier in the oil and oil were as follows: GMS 1.50%,PGFE 1.78%,DATEM 0.78%,CITREM 0.83%;55% The content and dosage of the emulsifier in the butter and oil were: GMS 1.50%,PGFE 1.76% DATEM 0.80%,CITREM 0.87%,60% The composition and dosage of emulsifier in oily powder Grease: GMS 1.50%,PGFE 1.76%,DATEM 0.80%,CITREM 0.87%.3.Emulsification,homogeneous conditionsThe results showed that the emulsification stability was 97.21% under the condition of emulsifying time 15 min,emulsifying temperature 70?,emulsifying shear speed 10000 r / min and homogenization pressure 35 Mpa.The results showed that the emulsification and homogenization conditions were optimized.The emulsification stability was 96.11% under the condition of emulsifying time 15 min,emulsifying temperature 70 ?,emulsifying shear speed 11000 r / min and homogenization pressure 30 Mpa.The emulsification stability of 60% butter oil was 15 min,Emulsification temperature 70?,emulsifying shear speed 11000 r / min,homogeneous pressure 35 Mpa under the conditions of emulsification stability of 94.32%.4.Spray drying parametersThe results show that 20%,30% and 40% tallow oil are respectively heated at an inlet temperature of 197 ?,200 ?,198 ?,an inlet air volume of 90%,and an oil volume of 90% %,90%,and the material flow rate were 13%.The embedding rates of the products were 94.14%,93.16% and 85.75% respectively.5.finished product moisture content,POV value50%,55%,60% butter oil powder moisture content were 1.64%,2.02%,1.94%,in line with national standards.60% vanillic oil to accelerate the oxidation of 24 days finished POV value of 2.08meq/kg,compared with the same conditions in the raw material butter POV value of 13.36 meq /kg.6.Finished particles ultrastructureThe results of scanning electron microscopy showed that the ultrastructures of 50%,55% and 60% tallow oil powder were spherical,the surface structure was intact,compact and no crack,and the particle size was uniform.
