With soy protein isolate,whey protein,egg white protein as raw material,according to principle of complementarity between amino acids to soy protein isolate,whey protein,and according to certain proportion distribution of egg white protein,amino acid score was carried out on the distribution of protein powder,compare to the ideal model of amino acids,the FAO/WHO,the sifting of the eight kinds of essential amino acids are closer to the standard amino acid pattern distribution of protein powder,created by this protein powder easily absorbed by the body and use.In this paper,according to three different g roups namely,teens,pregnant women,the elderly of different physiological characteristic and the demand for nutrition,adding minerals,vitamins and special nutritional factors.Drying with spray drying;On the basis of optimization distribution of protein powder to compound with good indicators of evaluation on the protein powder,including sensory evaluation,digestion in vitro simulation experiment and evaluation of nutritional value of protein.Paper main research results are as follows :1 Adolescents,pregnant women and the elderly in China these three kinds of special groups of different physiological characteristics and nutritional needs,optimization of different protein compound protein raw materials,adding suitable vitamins,minerals and special nutrition factor,complete for adolescents,pregnant women,the elderly patients for the formula design of compound protein powder.2 The test results showed that the content of protein in three types of protein powder was more than 80%.By the design of the compound protein powder content of essential amino acids in amino acid pattern and standards of the FAO/WHO close,vitamin and mineral content tested achieves the value in the design..3 The sensory evaluation of the protein powder produced by the design is presented as "good".The index of amino acids of adolescent protein powder,pregnant women's protein powder,elderly protein powder,and the essential amino acid index exceeded 100.The product has high nutritional value,which meets the needs of adolescents,pregnant women and seniors.
