toxicity,GEs have a potential carcinogenic effect on the human body.Therefore,in order to ensure the safety of edible oils and fats,it is necessary to study the levels and main influencing factors of 3-MCPD esters and GEs in fats and oils to control the formation of 3-MCPD esters and GEs.This project systematically studied the levels and changes of chloride ion,3-MCPD ester and GEs in different refining processes of different vegetable oil samples,and the effect of chloride ion on the formation of 3-MCPD ester and GEs.The effect of chloride ion on the formation of 3-MCPD ester and GEs content;The effect of adsorbent on the reduction of chloride ion content in deodorized oil and the reduction of chlorine ion content in the deodorized oil are needed to reduce the deodorization process.3-MCPD ester and GEs formation Impact.In order to prevent and control the development of3-MCPD esters and GEs generated oil refining technology to provide support.The fats and oils from various processes for the production of oil,corn oil,sunflower oil,soybean oil,rapeseed oil,and leaching peanut oil were collected from a grease factory.The contents of chloride ions,3-MCPD esters,and GEs were examined to investigate differences.Content and Variation of Chloride,3-MCPD Ester and GEs in Oil and Fat during Oil Refining.The results show that chloride ions are universal in the oil refining process,and the oil content of the oil in the oils of different refining stages is the highest.With the degumming neutralization,adsorption decolorization and other refining processes,in addition to 0.210mg/kg chloride ion content in the decolorization stage of leaching peanut oil,the chlorine ion content in the remaining oils decreased;in the deodorization stage,the chloride ion in the peanut oil was reduced by 0.386.In addition to mg/kg,the chloride ion in the other oils increased.By comparing the contents of 3-MCPD esters and GEs in each stage of the five oil refining processes,it was found that the content of 3-MCPD ester and GEs before deodorization of different kinds of oils was kept at a low level,among which the content of3-MCPD ester and GEs in corn oil was the highest.After the deodorization,the content increased significantly,and the largest increase was the leaching of peanut oil.The amount of the produced oil was 25.889 times and 24.30 times the amount of deodorized oil to be deodorized,and the chlorine ion content decreased most before and after deodorization.In summary,there are chloride ions,3-MCPD esters,and GEs in the refining process of different oils and fats,but the content of chloride ions,3-MCPD ester,and GEs in different oils during the refining process are different.The two oils were refined under the same refining conditions using corn and soybean oil,and the change rules of chlorine ion,3-MCPD ester and GEs content in the oil and grease were measured,and the chloride ion content in the refining process was applied to 3-MCPD ester and GEs.The effect of the formation showed that the content of chloride ions in corn oil and soybean oil gradually decreased as the refining process progressed.Due to the different phospholipid and acid values?in oils and fats,the change of chloride ion content is not completely the same in each stage of refining.In the deodorization stage,the decrease of chloride ion in corn oil is 6.2 times that of soybean oil.The analysis of the changes of3-MCPD ester and GEs content shows that the two oils have the same tendency in the refining process and all increase dramatically in the deodorization stage.The deodorization stage produces 3-MCPD ester and GEs in corn oil at 1.16 and 2.09 for soybean oil.Times;and because the decrease of chloride ion in corn oil is much higher than that of soybean oil,the analysis of the correlation between chloride ion and 3-MCPD ester and GEs in deodorization process shows that chlorine ion and 3-MCPD ester and GEs are in the deodorization stage.The correlation coefficients of the contents were-0.72275 and-0.66062,respectively,and all showed a moderate negative correlation(P<0.05),indicating that the more chloride ions were reduced in the deodorization process,the more 3-MCPD ester and GEs were generated.By changing the chlorine ion content in the steam water source and the oil to be deodorized,the effect of chloride ion content on the formation of 3-MCPD ester and GEs was studied.The results showed that when the chlorine ion content in the water source was0-242.58 mg/L,the corresponding saturation.The retention of chlorine ions in steam is about0.1%.The chlorine content in the direct steam for oil deodorization increases with the increase of chloride ion content in the water source.When the chlorine ion content in the direct steam source for oil deodorization reaches 50-200 mg/L,the 3-MCPD ester content in the deodorized grease is increased.It was significantly increased to 2.6 times the content of deodorized oil and fat in low-concentration chloride water sources(1-10 mg/L),but the chlorine ion content in deodorized oils did not increase.When the sodium chloride solution is added to the oil to be deodorized,the content of chloride ions in the oil to be deodorized is increased,resulting in an increase in the content of 3-MCPD ester and GEs in the deodorized oil.When adding 0.5-5 m L sodium chloride solution at a concentration of 100 mg/L(corresponding to a concentration of 1 mg/kg to 10 mg/kg in oil),the 3-MCPD ester production in the deodorized oil was 4.49-7.84 mg/kg is 5.5-9.5 times that of the deodorized oil,and the generation of GEs in the deodorized oil is 14.88-19.84 mg/kg,which is 5.8-7.7times that of the deodorized oil.The chlorine ion content in deodorized oil does not increase with the increase of chloride ion content in the oil to be deodorized,but the chlorine ion content in the deodorized oil is maintained at about 0.35 mg/kg.Therefore,the content of chlorine ions in the direct steam and the chlorine ion content in the oil to be deodorized will affect the formation of 3-MCPD ester and GEs in the deodorized grease.In order to study the change of chloride ion content in the decolorization stage,the pretreatment method for the detection of chloride in the adsorbent was first optimized,and the chlorine ion content in white clay,activated carbon,attapulgite and diatomite was examined.The results showed that: Different kinds of sorbents contained higher concentrations of chloride ions,and the content ranged from 8.950 mg/kg to 187.881 mg/kg,and the same type of sorbent showed different content.Therefore,the use of the same amount of different types of activated carbon and white clay on the adsorption and decolorization of soybean oil,in addition to activated carbon TQ,all make the content of chloride ions in oil have varying degrees of reduction,of which the most reduced is activated carbon YS-900,reducing the83.2 %.After unbleached and decolorized oils were deodorized at 260°C for 2 h,the 3-MCPD esters and GEs contents in the deodorized oils after reducing the chloride ion content weredetermined.It was found that the 3-MCPD esters and GEs in the oils after deodorization were not decolorized.The contents of 6.588 mg/kg and 8.213 mg/kg were decolorized by activated carbon YS-900,and the content of 3-MCPD ester was reduced by 53.27% compared with non-decolorizing and deodorizing oil.The lowest GEs content was the deodorized oil after bleaching by white clay 1060 FF.In order to reduce the amount of 3-MCPD esters and GEs produced during deodorization,the content of deodorised oil after decolorization of H-2activated carbon decreased by 51.9% and 30.1%,and the effect of 3-MCPD ester and GEs content in deodorization was controlled.the best.In summary,by studying the changes of chloride ion,3-MCPD ester and GEs content in five different vegetable oils and corn oil and soybean oil under the same refining conditions,it was found that chlorine ions obviously produce 3-MCPD ester and GEs in the deodorization stage.On this basis,the influence of different sources of chloride ion on the formation of3-MCPD ester and GEs content in deodorization process was studied,and H-2 activated carbon was selected to reduce the chloride ion content in the process of adsorption and decolorization,thereby reducing the deodorization.The formation of process 3-MCPD esters and GEs provides support for the development of refining technologies that prevent and control the formation of 3-MCPD esters and GEs in lipids.
