As China’s economic development, living standards continue to improve household food consumption structure is constantly being improved, the beef market is expanding year by year.However, due to ante-mortem phase of the stress response can lead to a decline in the quality of beef, beef domestic research on stress reaction solution is still not perfect, this paper is divided into three parts, were studied. Different ambient conditions before slaughter beef cattle pH temperature relationship of muscle glycogen content after acid discharging in different seasons and post-mortem(experimental 1), respectively, in the winter(at room temperature 6 ℃),spring(room temperature 19 ℃), summer(at room temperature 27 ℃) gathering cattle body temperature, pH value, muscle glycogen content data. Seasonal(room temperature), pH value,the relationship between the three muscle glycogen content, while 15 days before slaughter using different levels of dietary energy fed cattle, beef pH study between dietary energy levels and after acid discharging the relationship(experimental 2), and try to supplement energy substances through ante-mortem and special nutrients(glucose, inositol, melatonin) to improve pre-slaughter stress of cattle and beef(experimental 3).Experimental 1: For different seasons under the condition of room temperature before slaughter cattle body temperature, muscle glycogen content and acid discharging after beef slaughter the relationship between the pH value has carried on the system research. The results showed that, after muscle glycogen content and acid discharging beef pH showed a negative correlation between muscle glycogen content is higher, the lower the pH after slaughter, shows that there is too much muscle glycogen consumption lead to insufficient substrate during acid discharging, producing lactic acid to reduce the pH value. Also of glycogen content in different season, different temperature and after acid discharging beef pH have a significant impact, as temperatures rise, beef cattle, on average, glycogen content and pH value also increased significantly, to reach a peak in the summer, at the same time, the risk of high pH value of beef cattle increased significantly, showed that the temperature stress before actually exacerbate beef slaughter, cause before slaughter cattle body muscle glycogen were excessive consumption,reduce lactic acid produced during acid discharging content, in the end the limit of beef pH value is higher.Experimental 2: The effects of pH and slaughter rates after acid discharging before slaughter beef cattle diets of different energy levels. The results showed that the intake of nitrogen-free extract pH value of beef after acid discharging significantly affected negatively correlated final pH extremes of high nitrogen free extract intake of beef acid discharging after the test group was significantly lower than non-nitrogen low extract intake test group, indicating the energy level of the overall energy metabolism influence of beef cattle, beef cattle will be in a high energy level to store more glycogen and fat in the body, the pre-slaughter stress remaining after the consumption stage glycogen content is more, the pH value will decline after acid discharging to a lower level; slaughter rates affect crude protein intake of beef significant positive correlation, high crude protein intake of cattle slaughter rate test group significantly higher than the lower crude protein intake of the test group, showed crude protein for beef cattle weight gain the greatest impact, the impact of body protein metabolism, increase protein deposition into muscle tissue.Experimental 3: Analysis to kill phase beef cattle supplementary feeding glucose, muscle and melatonin on after acid discharging beef pH value, the influence of the slaughter rate.Results show that the supplementary feeding glucose within 24 hours before slaughter of acid discharging beef pH, slaughter rate affect significantly, because before the break feed, slaughter cattle body energy consumption without supplement, after glucose supplement energy, have positive effects on stress before slaughter, because after energy supplement, glycogen content in the body, the stress under the condition of invariable in glycogen consumption to slaughter stock of muscle glycogen in the muscles also increases, finally acid discharging beef pH lower.Analysis to kill phase beef cattle supplementary feeding glucose, muscle and melatonin on after acid discharging beef pH value, the influence of the slaughter rate. Impact on beef acid discharging pH value within 24 hours before slaughter inositol supplementation significantly affect slaughter rate is not significant, indicating a better ante-mortem inositol supplementation plays a complementary effect of energy, but also reduces muscle glycogen consumption, but the impact on the slaughter rate is not significant, indicating that a small amount of inositol supplements had little effect on beef cattle weight gain in the short term;melatonin supplement melatonin within 24 hours before slaughter beef acid discharging pH value, the slaughter rate has little impact, no relevant, indicating that the short-term supplement melatonin to increase beef sleep time, reduce stress does not affect the reaction, it does not affect cattle weight gain.
