The high toxic organophosphorus pesticide methamidophos(MAP)has been banned in the use of agriculture since 2007.Currently acephate(ACE)is still used on rice,wheat,cotton,citrus fruits and vegetables.but acephate is metabolized to produce methamidophos in plants,resulting in the quality and safety of agricultural products.In order to understand the metabolic process,this article selected tomato fruits as material,acephate as the research object,studying the influence of the metabolism of acephate in different processing methods in tomato fruits,the main research results are summarized as follows:(1)By injecting acephate in tomato fruits of three kinds of maturity of green ripe stage,veraison,red ripe stage at room temperature,after 48 hours,the degradation of acephate rate in these three maturity of tomato fruits are 49.6%,49.1% and 49.6%,the concentration of methamidophos were 0.151,0.123 and 0.199 mg/kg.The activity of enzyme which can degradate acephate in tomato fruit are likely to be higher in red ripe stage.(2)By injecting acephate in helium,oxygen,nitrogen,outdoor injection ascontrol.After 48 hours,the degradation of acephate rate were 52.3%,54.8%,52.0%,54.8%,and the concentration of methamidophos were 0.0759,0.0649,0.0694,0.1990 mg/kg.Both of the degradation of acephate and the generation of methamidophos have been influenced,lower than the control group.Thus speculate that the activity of enzymes involved in the metabolism of acephate process may be affected in a single gas environment.(3)The tomato,crumbed in helium,oxygen,nitrogen environment then adding acephate in,the outdoor as a control group.After 48 hours the degradation of acephate rate were 57.6%,31.9%,38.7% and 31.9% respectively.The concentration of methamidophos were 0.0216,0.01543,0.00623,.01663 mg/kg,In helium,both of the concentration of methamidophos and the degradation rate ofacephate were the maximum,But the generation of methamidophos in nitrogen group was far less than other groups.When compared the changes in the concentration of methamidophos of the injection group with the crumd group in the same environment,it inferred that if exposed in environments can significantly reduce the generation of methamidophos.(4)After injection of acephate the tomato were refrigerated in-20?,after 48 hours,the concentration of acephate and methamidophos had no significant change.And in different temperature experiment,at 55 ?,the detected concentration of acephate was equal to the adding concentration,and the concentration of methamidophos was far lower than the others.By two groups of tempera-ture test presumably acephate metabolic activity in the tomato fruit by enzyme involved in the reaction.(5)In summary,it should be the enzymes involved in the metabolism of acephate in tomato fruit.The enzymes how to participate in metabolic need further test to confirm.
