Senescence is an important stage of fruit and vegetable life cycle,which is dir ectly related to maintain postharvest quality and shelf life of fruits and vegetables.Senescence and decay directly affect the quality of fruits and vegetables products a nd market value,the mechanism researching of them has theoretical significance an d application prospects.Selenium?Se?is an essential trace element,its antioxidant mechanism can protect the body,which is included in glutathione peroxidase?GSH-px?of plant,can remove free radicals and improve the activity of antioxidant enzymes.Se at lower concentration has a beneficial effect on plant growth and can strengthen the plant disease resistance and enhance antioxidant activity effectively.In order to further explore the function of Se effecting senescence and disease resistance of fruits and vegetables,we use different concentration of sodium selenit e?Na2SeO3?to treat fruits of tomato and broccoli,and also combining Rhodotorula mucilaginosa with Se to study their influence on improving the induced resistance of fruits of tomato on Botrytis cinerea,we discussed the possible action of mechan isms of Se from the level of cell physiology and physical and chemical analysis,th e main results obtained as follows.1.Using 25mg/L sodium selenite solution to treat fruits of tomato and the results showed that 25mg/L sodium selenite could improve the activity of antioxidant enzymes,delay senescence,prolong storage period and maintain the sensory quality of tomato fruit.2.Through the electronic nose and GC-MS,we found that 2mg/L of sodium selenite treatment can effectively maintain the broccoli quality during storage,especially the volatile flavor components.3.Sodium selenite with antagonism yeasts treatment can improve the tomato resistance of grey mould,reduce the incidence and disease spot diameter of tomato effectively,and the effect are more remarkable than the single using of sodium selenite or antagonism yeasts.
