The purpose of this experiment is to study the different of nutritional components,mineral,vitamin and heavy metals in characteristic parts between Simmental and it's crossbred cattle,Hexi(Wagyu?×Simmental?)and Anxi(Angus?×Simmental?),and to provide the reference for improve the meat quality in the process of commodity bull breeding.The research randomly selected Simmental,Anxi and Hexi with average weight 330 kg at about 13 months after weaning as experimental material.A total of 27 bulls were fattened about 210 days in the same condition of dietary nutrient level.After slaughtering,gathered longissimus dorsi muscles,flank steak,tenderloin and topside in the same site of left carcass to detect.The results are as follows:1.In the three breed,the difference of common nutritional components and mineral was not significant(P>0.05).And there was no big difference could be found in the vitamins contents of topside(P>0.05).The content of crude protein,ash and delicious amino acids in hybrid cattle were higher than Simmental,especially in Anxi.And the content of vitamin A and vitamin E in Anxi were higher than in Simmental.Analysis the content of animo acid,only the content of His showed the trend of significant difference(P=0.06).The content of delicious amino acids in hybrid cattle were higher than Simmental,especially in Anxi.In conclusion,Anxi with higher content of crude protein,ash and delicious amino acids has preferable nutritional value.In the different characteristic parts,the difference of common nutritional components and mineral was significant(P<0.05)and the content of crude fat,ash,calcium and phosphorus extremely significant(P<0.01).The content of Gly,Cys,Ile,Lys and Pro was significant(P<0.05).Compared with other characteristic parts,the content of crude protein in topside was higher and crude fat content was lower,it is better to meet the consumer demand.In the flank steak,the content of crude fat exceeded 3%,the content of calcium was higher and the content of delicious amino acids was richer,so it has preferable taste and flavor.3.The content of lead,arsenic,chromium in Hexi were significantly lower than in Simmental(P<0.05).And the content of cadmium in Anxi were significantly higher than in Simmental(P<0.05).The content of mercury in Hexi were significantly higher than in Simmental(P<0.05).The content of lead,chromium were significantly higher than in Anxi(P<0.05).The content of mercury was lower than in Anxi.The stock volume of heavy metals in the longissimus dorsi muscle of Simmental and Hybrid Cattle with the same breeding environment do not present the same regularity.The correlation relationship of the lead,cadmium content between longissimus dorsi muscle and roughage is higher,the lead,cadmium content between longissimus dorsi muscle and concentrate is higher,and mercury content between longissimus dorsi muscle and water is higher.4.Use the i TRAQ-based proteome profiles to identify the molecular processes that are involved in the different characteristic parts,flank steak and tenderloin of Simmental.A total of 15255 peptides and 1663 proteins(?96.4 confidence)were identified.When the value of different expression multiplied was above 1.5,the expression of 128 proteins was altered significantly in the two characteristic parts,44 of which were up-regulated and 84 down-regulated.GO and pathway enrichment analysis were performed to detect the functional subcategories and metabolic pathways that the differentially accumulated proteins were significantly enriched in.Results suggest that the percentage of oxidation reduction process are higher in the separation and identification of differentially expressed proteins.
