In tea production,as one of the raw materials,Jasminum sambac has its color pure white and aroma pure,the quality characteristics of Jasminum sambac effects the quality of tea scenting directly.At present,the double valve Jasminum sambac is wildly used in scenting tea at domestic,but other varieties of Jasminum sambac have theirs unique aroma components which are better than double valve Jasminum sambac,which is conducive for tea quality and the development in new varieties of jasmine tea is finding out the unique aroma components,and researching theirs dynamic change.In this paper,about the aroma components in process of aroma releasing,there was a comprehensive analysis for the double valve Jasminum sambac,the single Jasminum sambac,the Taiwan Jasminum sambac,the tricuspid valve Jasminum sambac and the Burma Jasminum sambac,in the isolated condition and living condition,the article found out the aroma components in process of aroma releasing for different species,and discussed the main aroma components,the results were as follows:1.There were several components such as Linalool,Indole,Methyl anthranilate,2-Formate acetophenone,Caryophyllene and Benzyl benzoate,that gave the fundamental effert for the main aroma.The main characteristic aroma components in the double valve Jasminum sambac were Fenchyl Acetate,a-Humulene,(E)-1,3-hexadiene,3-Carene,a-Copaene,Fenchyl Acetate,Germacren-e B,Valencene,Ethanone,2,2-dihydroxy-l-phenyl-.The main characteristic aroma components in the single Jasminum sambac were Benzyl alcohol,Fenchyl Acetate,Phenethyl acetate,y-Muurole-ne,Farnesol,1,5-Dimethyl-l-vinylhex-4-enyl isobutyrate,Methyl salicylate.The main characteristi-c aroma components in the Taiwan Jasminum sambac were Fenchyl Acetate,5-Dodecen-l-ol,acetate,4-Hexen-l-ol,acetate,Hexyl acetate,a-Farnesene,cis-3-Hexenyl isobutyrate,γ-Muurolene,3-Carene,cis-3-Hexenyl valerate,a-Humulene,Farnesol,Benzyl alcohol,1,5-Dimethyl-1-vinylhex-4-enyl isobutyrate,Ethyl benzoate,Germacrene B,1,3-p-Menthadiene,cis-3-Hexenyl formate.The main characteristic aroma components in the tricuspid valve Jasminum sambac were Benzyl alcohol,Germacrene D,4a-hydroxygermacra-1-10,5-diene,4-Hexen-1-ol,acetate,Methyl salicylat-e,Farnesol,Phenethyl acetate,4-Methylcyclopentene,a-Terpinene,Fenchyl acetate.The main charac-teristic aroma components in the Burma Jasminum sambac werea-Humulene,Germacrene B,a-Farnesene,Benzyl alcohol,2-Methyl-4-hexyne-3-one,(+)-γ-gurjunene.2.The research on the dynamic changes of the mianly aroma components in the open process of Jasminum sambac.(1)The relative content of Linalool,in the double valve Jasminum sambac,the single Jasminum sambac,the Taiwan Jasminum sambac,had the trend of Increased at first,and then decreased.,in the tricuspid valve Jasminum sambac,had the trend of decreased at first and then increased,in the Burma Jasminum sambac,had the trend is increased in isolated state,had the trend of increased at first,and then decreased in living condition.(2)The relative content of Indole,in the five kinds of Jasminum sambac,had the trend of increased at first,and then decreased.(3)The relative content of Anthranilic acid methyl ester,in the double valve Jasminum sambac,the Taiwan Jasminum sambac,in the tricuspid valve Jasminum sambac,had the trend of increased at first,and then decreased,in the single Jasminum sambac,the Burma Jasminum sambac,had the trend of increased at first,and then decreased in isolated state,had the trend is increased in living condition.(4)The relative content of 2-Formate acetophenone,in the double valve Jasminum sambac,the Taiwan Jasminum sambac,the tricuspid valve Jasminum sambac,had the trend of increased at first,and then decreased,in the single Jasminum sambac,had the trend is increased in isolated state,had the trend of increased at first,and then decreased in living condition,in the Burma Jasminum sambac,had the trend is increased.(5)The relative content of caryophyllene,in the double valve Jasminum sambac,the tricuspid valve Jasminum sambac,the Burma Jasminum sambac,had the trend is declining,in the single Jasminum sambac,the Taiwan Jasminum sambac,had the trend of increased at first,and then decreased in isolated state,had the trend is declining in living condition.(6)The relative content of benzyl benzoate,in the double valve Jasminum sambac,had the trend is increased,in the single Jasminum sambac,had the trend is increased in isolated state,had the trend of increased at first,and then decreased in living condition,in the Taiwan Jasminum sambac,had the trend of increased at first,and then decreased,in the tricuspid valve Jasminum sambac,had the trend is declining,in the Burma Jasminum sambac,had the trend of increased at first,and then decreased in isolated state,had the trend is declining in living condition.(7)The relative content of Fenchyl Acetate,in the double valve Jasminum sambac,had the trend of increased at first,and then decreased,in the single Jasminum sambac,had the trend of increased at first,and then decreased in isolated state,had the trend is increased in living condition,in the tricuspid valve Jasminum sambac,had the trend is increased in isolated state,had the trend of increased at first,and then decreased in living condition,in the Burma Jasminum sambac,had the trend of increased at first,and then decreased.3.The results showed that there were significant distinguish in the aroma amount different kinds of Jasminum.γ-Muurolene was found in singal valve Jasminum and Taiwang Jasminum,but absence in double valve Jasminum.There were more alcohols in the aroma contents of the tricuspid valve Jasminum sambac.That means its sensitive about potpourri was higher than others.There was no Fenchyl Acetate could be found in the aroma contents of the tricuspid valve Jasminum sambac and the Burma Jasminum sambac.The aroma characters with the Taiwan Jasminum sambac,the tricuspid valve Jasminum sambac and the Burma Jasminum sambac were unique.There could be a planting for demonstration in production field.
