Liquorice is the leguminous glycyrrhiza genus plants. The whole world about more than 30 kinds, and there is six kinds state in our country.There are three main types of medicinal varieties prescribed in ?Chinese pharmacopoeia?, include dried root and rhizome Glycyrrhiza uralensis Fisch., G. inflata Batal. and G.glabra L.. It is mainly produced in the northwest of China.In this study, the enzymatic hydrolysis process for licorice glycosides conversion liquiritigenin was optimized by response surface experiment. The main factors include, type of enzyme, enzymatic hydrolysis temperature, enzymatic hydrolysis time, the amount of enzyme added, and effect of Cellulase on the conversion rate of licorice is greatest. The use of cellulase enzymatic hydrolysis licorice, the primary and secondary order of the effect of three factors on the conversion rate of licorice: the amount of enzyme added > enzymatic hydrolysis temperature > enzymatic hydrolysis time. The optimized process parameters are adjusted to Cellulase addition 1.85%, enzymatic hydrolysis temperature 65?, enzymatic hydrolysis time 131.0min. Under the optimum conditions, the conversion rate of the cellulase method was 98.6%.In this study, we compared the anti diabetic activity of liquiritin and after enzymatic hydrolysis of glycyrrhizin. Mainly through the STZ modeling, diabetes model induced by high fat diet in mouse and to observe the effect of licorice and licorice on type 2 diabetes mellitus. Results found, liquiritin and glycyrrhizin can reduce diabetic mouse diet and water intake, improve blood sugar, improve blood lipid disorders, reduce the content of tumor necrosis factor and leptin in the serum, improve the content of antioxidant enzymes in the liver, decrease the content of MDA. These showed that the two had better anti diabetic activity.Liver injury is an important issue at present. Through the animal models of liver injury experimental to drug screening for liver injury right has important significance. The liver is the body's detoxification organs, to prevent the invasion of a variety of external substances(alcohol, toxins, etc.). The indexes in serum and liver(ALT, AST, TBIL, SOD, MDA) were the main testing indexes of the liver injury experimental animals. The results of this experiment show that, the content of ALT and AST in serum of mouse induced by LPS was significantly increased, through the intervention by liquiritigenin and liquiritin, the contents of ALT, AST, ALP and TBIL in the serum of mouse were significantly decreased and significant difference in mouse liver injury model induced by LPS. Its can improve the blood lipid disorder, improve the level of TC and TG in serum and to reduce the level of ALT and AST in the liver of mouse, enhance the level of SOD and GSH, reduce the content of MDA, and protect the damaged liver. Its may also be achieved by protecting the damaged liver cells. The mouse liver histopathology section proved this conclusion.
