University canteen is very importance place where food service, one of logistical support services, is provided to its staff and students. However current approach of food service management of most university canteens cross the world, esp. in China, is still experience-oriented and lacked of a whole set of risk-based food safety management system. Some pertinent researches on application of all of kinds of modern food safety management systems in university canteen have come out. Comparatively ISO 22000 Food Safety Management System has somewhat more advantages. But pertinent studies on ISO 22000 application in university canteen mainly focus on the theoretical fields, and very few report on trial implementation has published, especially detailed report with ISO 22000 implementation in a specific university canteen. Basing on all canteens’ operations of our university(South China Agriculture University) we has selected Shenyuan canteen, with operation under HACCP environment for a couple of year, further applied ISO 22000 system to its daily operation to test feasibility and effectiveness of ISO 22000 system in Chinese university canteen.Combing the current operation of food service management and relevant reports and lessons of food safety in Chinese university canteens, this study has interpreted and analyzed the foundation and feasibility of application of ISO 22000 system in university canteens. Further in more detail the research has applied the framework and principle of ISO 22000 system to daily operation of Shenyuan canteen. Firstly the research has described and classified the process of food operation in Shenyuan canteen, further drafted a layout of its food operation. Secondly the research has applied the principle of HACCP, conducted hazard analysis and further formulated HACCP plan table. Thirdly the research has established relevant operational guidelines of ISO 22000 system for Shenyuancanteenincluding specific operation procedures, instructions and standards of performance, content and requirement of training as well verification objectives. Lastly our comparative study of ante- and post-implementation of ISO 22000 system in Shenyuan canteen has shown good improvement in following criteria: compliance rate of organophosphorus pesticide residues, pass rate of tableware disinfection, pass rate of total number of colonies for ready-to-eat meats, improvement rate of hygienic practices of canteen staff,client satisfaction rate, as well evaluation result of food safety experts.In a word, through trial implementation for 8 months in Shenyuan canteen the study, for the first time, has initially verified that it is feasible and effective to implement the globally-recognized ISO 22000 food safety management system in Chinese university canteens.Also our Shenyuan canteen has officially been rewarded with highest ranking cross Guangdong university canteens duringand after implementation of ISO 22000 system. Therefore this study can provide an example or model for implementation of ISO 22000 in university canteen in the future. |
