In recent years,food safety has become a hot topic of public debate because of the frequent occurrence of food safety incidents and media hype,and governments everywhere have introduced policies to ensure food safety.Multiplying increased year by year increased enrollment in colleges and universities,the number of students,the college dining room big responsibility heavy task,in this paper,based on this background,starting from the food safety problems of college canteen food security as the breakthrough point,analysis to explore under the background of current social college canteen food safety situation and the existing problems in management.In this paper,based on the related concepts of the management of university cafeteria,according to the theory of new public management and food safety,food quality management theory as the basis,through questionnaires,interviews,comparative analysis and other methods to CK university as an example in the college canteen food safety problems were analyzed,and the study found that CK college canteens in food hygiene and freshness of raw materials,food preservation,tableware disinfection,sanitation workers health problems of different level,etc.Personnel innovation ability at the same time,low professional quality is uneven,backward infrastructure construction,the lack of hardware and software facilities,lack of funds and scientific and reasonable system of workflow is also restrict the canteen safety management an important issue.In understanding the basic situation,compare the logistics socialization reform earlier canteen management reform experience,the other two universities will CK university canteen management is one of the main problems existing in the system,personnel,infrastructure,etc.,and under the guidance of the new public management theory to optimize university canteen food safety management countermeasures are put forward,the main measures include: perfecting the supervision and management system,the implementation of food safety related system;Personnel safety awareness training,design personnel incentive mechanism and personnel supervision and reward and punishment system;Improve the hardware facilities,popularize the information construction and transform the operation mode to reduce the cost and increase the profit. |
