Food safety is closely related to consumer’s life,food safety problems occur frequently in recent years,especially in meat products,due to the opacity breeding,processing and other links,consumers gradually lost the confidence of the purchase.The quality and safety traceability system not only can make the product in the supply chain of each node is tracking,also can trace from the downstream of the supply chain,to find problems in a timely manner,to avoid the occurrence of food safety problems,also be able to meet the needs of consumers know well.This are a lot of sheep in Xinjiang,meat products processing,for example in this paper,combined with field research situation in Xinjiang,choose the right mode of supply chain,main design and research with mutton slaughtering and machining of the traceability system,realize the foundation that consumers,regulators and enterprise were involvedIn this paper,mutton sheep as the research object,slaughter processing process as the starting point,the study is mainly from the following four parts of Xinjiang mutton quality and safety traceability system.The first part mainly analyzes the current situation at home and abroad,and mainstream technology in the traceability system,as well as the related theories and key technologies.From supporting policies and laws and regulations,the status quo of the agricultural products traceability system,the present situation of the application of identification technology and so on,introducing the implementation process of quality and safety traceability system in detail,summarizing and absorbing foreign advanced experience.It also introduces traceability system theory,RFID(Radio Frequency Identification)technology,NFC(Near Field Communication)technology,HACCP(Hazard Analysis Critical Control Point)system.Analysis compared the NFC and RFID,the advantages and disadvantages of application on the traceability system,the application of the NFC mobile phones can make traceability system in actual spread to the consumers,it’s do convenience for the consumers terminal traceability.The second part analyzes the closed supply chain model and lamb suitable supply chain model in Xinjiang at first;Secondly introduced the HACCP system of mutton sheep slaughtering and processing process hazard analysis,the harm is determined,and the key points of the quality and safety of mutton are analyzed and studied,the control points are selected,the control points are restricted,and the key traceability information are determined.The last expansion theory of spanning tree model is established,analyzing the causal mechanism,build the causal relationship between pyramid model based on extended spanning tree structure,to make mutton processing level analysis and causal analysis,and form a causal analysis view.The third part,combined with the design of RFID and NFC information acquisition scheme,analysis EPC system and EPC code.According to the actual situation of the mutton sheep slaughtering and processing research in Xinjiang,to design system code scheme,specific design Information collection of the seven key control points which including pre-slaughter inspection,carcass inspection,acid discharge,bone segmentation,packaging,quick-frozen,cold storage.Analysis the change of trace in the process ofacquisition unit and information transmission。The fourth part design the traceability system,The system is based on B/S(Browser / server)mode structure system.Analysis of system framework,main function modules.Design a database table,the relationship between the E_R diagram and the database model.System development platform based on Visual Studio 2010,the database using Microsoft SQL Sever 2008.Tested the label use the cell phone terminal public traces APP such as "NFC Toolkit","Pai Chacha".Through the research of this paper,slaughter and processing enterprise can realize mutton quality and safety management,implement information sharing of supply chain,improving the core competence of enterprise;Regulators to monitor enterprises,tracking products,ensure food quality and safety;Consumers realize convenient query requirements of information.In the end,to speed up the construction of quality safety traceability system,promote steady and rapid development of the food quality and safety in Xinjiang.
