Food is easy to be infected by pathogenic microorganisms in the process of production and storage and corruption occurs,which not only makes food lose its nutritional value,but also causes serious economic losses,at the same time endangers human health and affects people's quality of life.By releasing antibacterial agents and other target ingredients into food through active packaging,the goal of reducing or even eliminating pathogenic microorganisms in food can be achieved,thus extending the shelf life of food and ensuring food safety.Therefore,it has become a hot research direction to find efficient,stable and safe natural preservatives.In this paper,three plant essential oil bacteriostatic agents were used to select the compound essential oil with broad spectrum,high efficiency and stability for the pathogenic bacteria with high detection rate in 6 kinds of food.In this paper,eugenol and carvinol were selected to compound,the bacteriostatic effect of compound essential oil was discussed,and the optimum compound ratio of the two was determined.In order to obtain compound bacteriostatic essential oils with strong sustained release and high stability,microencapsulation of essential oils was carried out,and the embedding process was optimized and screened to obtain the best technological parameters.Finally,the bacteriostasis and stability of microcapsules were verified.The findings are as follows:(1)Antibacterial activity of essential oil antibacterial agent on foodborne pathogenic bacteria.Through the bacteriostatic circle test of three single components of plant essential oils,it was found that the bacteriostatic sensitivity of bacteriostatic agents did not increase with the increase of the addition amount,but needed to play a better role in the appropriate dosage.By three kinds of single component plant essential oil bacteriostatic agent to determine MIC,the bacteriostatic effect of 6 kinds of pathogenic bacteria of eugenol is superior to carvacrol,its comprehensive antibacterial sensitivity is best,the thyme of phenol is sensitive to its bacteriostatic strains of staphylococcus aureus,salmonella and e.coli bacteria showed strong bacteriostatic action,different sources of strains MIC value difference.The combination of three single components of plant essential oil bacteriostatic agents was measured by MIC,and then combined with hierarchical bacteriostatic concentration index FIC comprehensive analysis,it was found that thymol was not suitable for the combination of bacteriostatic agents of the other two essential oils.After the combination of eugenol and parsley,there was no high synergistic synergistic and bacteriostatic effect,but some of the mixture proportion showed additive effect,the other proportion showed irrelevant effect after the experiment,and a few proportion showed antagonistic effect.(2)The compound essential oil was optimized for the capsule process.The composite essential oil was used as the core material and ?-cyclodextrin as the wall material.Orthogonal test was carried out on the basis of single factor test by means of precipitation method,and the optimum technological conditions for preparation of compound essential oil microcapsules were determined.The optimal technological parameters were: the ratio of core material to wall material was 1:6,the wall material concentration was 11.11%,the mass ratio of essential oil to ethanol was 1:25,the embedding temperature was 70?,and the embedding time was 2.5h.Under these conditions,the embedding rate of microcapsules prepared was 75.21%.Under these conditions,the entrapment rate of the microcapsules was75.21%.After heat treatment,the microcapsules of essential oil basically maintained the original bacteriostatic activity.This indicates that the bacteriostatic components of essential oil microcapsules are improved after embedding,and still have a strong inhibitory effect on the growth of microorganisms.The core material retention rate of microencapsulated compound essential oil was compared with that of unencapsulated compound essential oil at room temperature.To sum up,with eugenol and carvacrol 1:2 distribution as the core material,?-cyclodextrin as wall material,the ratio of core material and wall material is 1:6,wall material concentration was 11.11%,the mass ratio of essential oil to ethanol is 1:25,the embedding temperature is70 ?,the embedding time was 2.5 h of essential oil microcapsule has good antibacterial activity,stability and sustained release.
