Objective:This study aimed to establish an index system for the safety assessment of dairy products,and then build the dairy safety risk assessment index,and evaluate the safety of dairy products in different periods,so as to analyze the risk of dairy product safety;Build a risk assessment index for monitoring objects to find out the main risk factors that affect the safety of dairy products.According to the evaluation results,it proposed targeted countermeasures and opinions on the strengthening of dairy product safety risk management,and provided decision support and reference for the government and food regulatory agencies.Methods : The selection methods of dairy products safety risk indicators were literature reading and group discussion.Comprehensive evaluation method adopted entropy method,principal component method and improved principal component.Data sorting and analysis were used SAS9.4 and SPSS25 statistical software.Results:Based on the principle of index selection,a total of 14 indicators were selected by the method of literature reading and group discussion.According to the spearman rank correlation coefficient of the comprehensive index ranking obtained by the three comprehensive evaluation methods,the consistency of the three methods was extremely high;By calculating the internal consistency of the 14 indicators,the result showed that the Kronbach index was greater than 0.9 and the consistency was excellent.Spearman rank correlation coefficient was used to test the consistency of the ranking of the composite index obtained by the three methods,and result showed that the correlation between the three methods was close(P<0.01),which passed the consistency test.The Kendall consistency index tested the overall consistency of the three methods,and the results showed that P < 0.01,indicating that the three methods were generally consistent.Random block analysis of variance showed that the difference between the groups was not statistically significant(P = 0.234),and the difference between the groups was statistically significant(P <0.0001)Conclusion:Except for the 2008 and 2009 ranking changed,the rest of the years were consistent.The dairy product safety risk index was the lowest in 2008 and the highest in 2014.The difference between the three methods was not obvious in our study,which was related to the sample size and the index.However,in principle,Jackknife's principal component method can effectively control the influence of noise variables on the weight,making the final index more robust.The safety risk of dairy products was the lowest in 2014,and the reason was that 2014 was the year when China's dairy market policies was the most implemented.The price of fresh milk "plunged" and many small farms went bankrupt,which was a blow to dairy farmers.But,in today's market economy,the elimination of small farms was a trend and a favorable trend to ensure the quality of milk sources.However,monopoly of large farms would also lead to a series of safety problems,so the combination of the two organically could promote the safety of China's dairy industry.
