Konjac glucomannan(KGM)is a kind of amorphophallus konjac tubers which is neutral polysaccharide and been found in plants with the genus in higher molecular mass and excellent water soluble.Extraction and separation characteristics of konjac glucomannan,approving that the konjac glucomannan ring polymer was complex,difficult to control.According to the investigation about the konjac glucomannan structure,especially the relation between the topological conformation and function in the liquid state is very popular at present.This thesis of simplification and analysis of single strand topology model and gel network topology model of molecular chain entanglement and sol gel process and mechanism were discussed as follows.Starting from the topological point of view,with the simplification of KGM's three-dimensional structure greatly,we provide the analysis and research methods of thinking and topology.Through topological analysis from the molecular structure of the establishment of mathematical model.The use of these models to predict the structure and properties of chemical molecules and molecular dynamics simulation,especially kink sites of action,thus provide new molecular micro foundation for synthetic chemistry.Through the establishment of mathematical model to explain further energy fitting problem of KGM system mechanisms,using stable topological structure of the chain(containing a variety of crosslinking possibility),providing guidance to build the mathematical theory of KGM polymer materials.First,from a macro description of the microscopic structure of konjac glucomannan single chain and its polymorphism,combined with the analysis of quantum decoherence which species/quantity of single chain chemical bonds inferred the internal state of konjac glucomannan solution may be constituted.Vector analysis of hydrogen bonded network topology model is KGM hydrogen bonded network compounds formation and simplify the process and the establishment,which play very important function and meaning for the study on the formation process of KGM compound network and high molecular material,in order to processing stability,changing product texture properties,even to laying the theoretical foundation and development of new products,and providing the foundation on how to analysis the KGM stability.The microstructure referring to topological simplification,the combining with physics,chemistry principle analysis,which can greatly simplify the konjac glucomannan's three-dimensional structure complex and improve the knowledge and understanding,can break through the bottleneck about synthesis,and can proposed model for topological analysis and prediction of food molecular analysis.
