| Dandelion is a kind of medicinal and edible herb.It has high nutritive value and is rich in many physiological active substances,such as three terpenoids,flavonoids,sesquiterpene lactones and so on.The dandelion as the research object,firstly study the methods and influencing factors of dandelion juice,then through the combination with peanut,hawthorn,formula of two kinds of compound beverage was studied,intends to provide the basis for the development and utilization of the dandelion,and provide guidance for the actual production.Dandelion juice was used as the raw material to study its juice making technology.Dandelion juice is mainly washed,selected,dried,preserved,chopped,soaked,boiled,filtered,homogenized,filled,sterilized,cooled,and so on.The optimum technological conditions are the ratio of liquid to liquid,1:25,soaking time 50min and cooking time 30min.The formula of compound beverage of dandelion and peanut was studied.The best formula of compound beverage of dandelion and peanut was as follows:Dandelion juice:peanut juice =3:1,sugar 7%,citric acid 0.08%.At the same time,0.2%compound stabilizer(xanthan gum:CMC Na =2:1)was added to the beverage.The compound beverage can obtain better stability effect.The formula of compound beverage of dandelion and haw was studied.The best formula of compound beverage of dandelion and haw was Dandelion juice 35%and hawthorn 20%,xylitol was 10%,citric acid 0.2%and sodium carboxymethyl cellulose 0.1%. |
