Auricularia auricular has a high content of crude protein,amino acids,carbohydrates and calcium,phosphorus,iron and other mineral elements needed by the body.The main active ingredient polysaccharide has the fuctions of lowering blood pressure,lowering blood sugar,reduce blood viscosity,anti-diabetic,anti-aging,anti-radiation and a variety of physiological functions.In this paper,Auricularia auricular is used as the main raw material to make chips with low fat,salt and without sugar.mice fed with high fat diet and fed with the chips,then mensurate weight?Lee's index?major organs and blood fat to research its possible lowering mechanism.The specific results are as follows(1)Study on Auricularia auricular powder pre-treatment conditions,the proportion of the raw material,the amount of the salt,soy sauce,water,gelatin and leavening agent added seven single factor on AAP-quality chips,and select the salt,water,gelatin and leavening agent to make response surface.The best formula is:Auricularia auricular powder through 160 mesh screen,the proportion of Auricularia auricular,potato starch and glutinous rich flour is 3:3:1;1.6%of salt,0.56%of leavening agent,0.34%of gelatin,the proportion of mixed powder and water is 1:5.3.According to human daily recommended amount,add the Auricularia auricular polysaccharides,soybean dietary fiber and L-carnitine and formula at 50 g chips,the amount of respectively 0.19%,0.29%,0.08%.Best Baking conditions are that above baking temperature is 110?,under baking temperature is 120?,baking time is 50 min by orthogonal experiment.(2)By mensurating peroxide value,the model of shelf life is LnT=-0.0128S+4.3289,the shelf life is 88 d,55 d,45 d at the temperature 25?,35? and 45?;By mensurating Acid value,the model of shelf life is LnT=-0.0177S+4.6913,the shelf life is 80 d,60 d,47 d at the temperature 25?,35?and 45 ?.Through verification experiment by changing the temperature can get that the change regulation of peroxide value and acid value accord with their stoage temperature regulation.acid value's goodness of fit is lower than peroxide value goodness of fit,so acid value's prediction model is more accuracy.(3)Low,medium and high doses of AAP chips instead of some feed,the mice daily food is ensured the same energy.Mice are measured body weight,Lee's index,organ index and blood fat.The results show that in the high dose group weighed less than high-fat group,high dose group significantly reduced in mice Lee's index(P<0.05),experimental group's liver index is lower than the fat group,AAP biscuits reduces TC significantly(P<0.05).
