Based on the theory of blueberry preservation and the physical characteristics of blueberries,this article takes the blueberry fresh fruit stored in the cold chain of logistics as the research object to determine the best storage temperature of cold chain storage of blueberry.Under the condition of blueberry cold chain storage,different preservative treatments were used to study its preservation effect,and a single and comprehensive analysis and evaluation was performed from the single factor multilevel and the contribution rate of preservation indicators.In order to explore the most suitable cold chain storage conditions for blueberries,orthogonal experiments were used to optimize the preservation process and the best preservation methods under cold chain storage were obtained.In order to verify the effect of cold storage on the shelf life,the blueberry index sensory evaluation model was used for analysis and evaluation.The research on the blueberry fresh fruit cold chain storage and preservation technology provides a reliable theoretical basis for improving the storage conditions of blueberries,solving the problem of poor preservation during blueberry preservation,and providing a theoretical basis for the practical application of cold chain storage of other fresh fruits.In the condition of blueberry cold chain storage at 4?,blueberry was treated with three methods of preservation.The hardness,weight loss rate,soluble solids(TSS),anthocyanin,VC,and titratable acid content of blueberry were determined.,MAD and PPO enzyme activities,the results show that:short-wave ultraviolet light has a certain effect on the preservation of blueberries,120s treated blueberry preservation effect is better than the 60s and 180s treatment of blueberries;with the increase in the concentration of volume fractions of CEO,the preservation effect is enhanced,fold The ear extract concentration of 1.0g/ml chitosan coating was the best;the preservation of the blueberry stored in the 2 well box was better than that of the sealed box and the 6-well box.Through the orthogonal experiment of three kinds of preservation methods,the best combination was shortwave UV irradiation 60s+1.0g/ml orthodontic root extraction solution chitosan coating + 2 holes storage.The effect of the blueberry index sensory evaluation satisfaction model on the best preservation effect of the cold chain storage on the shelf was adopted,and the blueberry overall sensory index evaluation score variation curve with time was a downwardly inclined curve.The overall blueberry satisfaction prediction model was y=0.490+1.409×odor+1.015×hardness+0.857×texture+l.123×rotation+0.725× weightlessness.Among the blueberry sensory indexes,the color had less influence on the overall satisfaction prediction model.
