Betel nut is the second largest crop in Hainan,and it is a popular food with people in the south.It easily loses economic value at room temperature.The existing treatments of betel nut are mainly on dry processing,less research on fresh preservation was found.Research on the fresh-keeping technology of betel nut can meet the needs of people for fresh betel nut and increase its economic value in the off-season.Based on the storage environment of the betel nut?13°C,O24%,CO24%,N292%?,the effects of coating,pre-storage hypobaric treatments and perforated moisture control packaging on the preservation of betel nut were studied.Relevant process parameters were determine.The main research contents and research results are as follows:?1?The antibacterial effect of sodium dehydroacetate?SD?,cinnamaldehyde?CA?and chitosan on the main pathogenic microbes of betel nut was studied.The effect was obtained by orthogonal test:chitosan>SD>CA.Selective concentrations of 0.5%,1.0%,1.5%chitosan solution?each with a concentration of 0.4g/L SD?were used to test the antibacterial coating of betel nut.The results showed that the rot rates were 20%,40%and 45%respectively,the control group was 25%,which meaned that the excessive concentration of chitosan was not conducive to the storage of betel nut.Antibacterial effect was the best when the concentration is 0.5%,and it could effectively reduce the respiratory rate and weight loss rate of betel nut,maintained cell integrity and appearance quality,delayed the consumption of nutrients during the 29 days storage period.?2?The effect of pre-storage hypobaric treatments on the preservation of betel nut was studied,the changes of each index after 20h treatment at 10,20,30,and 101kPa?atmospheric pressure?was measured.The results showed that the pre-storage hypobaric treatments could decrease the respiration rate of betel nut,keep the cell integrality,delay the decrease of nutrients such as VC,soluble solids and total phenol,and reduce the rate of rot.The order of effect was:20kPa?30kPa?101kPa?10kPa,the pressure of 20kPa was the best,small pressure was harmful to its quality.On this basis,a mathematical model was established to characterize the relationship between quality parameters,pretreatment pressure and storage time.?3?The effect of laser-based perforated moisture-conditioning packaging on the preservation of betel nut was investigated.By comparing the effect of different perforated area on the relative humidity in the package,the weight loss rate,sensory quality,skin color difference,rotting rate,and soluble solids of betel nut,the process parameters of the perforated membrane in the modified atmosphere storage were determined.The results showed that the smaller the micropore area,the higher the relative humidity in the packaging box,the lower the weight loss rate of betel nut,and the better the appearance quality,but the higher rotting rate relatively.Comprehensive quality indicators,perforated area of 18.84mm2 has the best preservation effect for per 200g betel nut,...
