Malt is produced by certain germination process,and malt is one of the most important materials for beer brewing.It can be said that the quality of malt directly affects the quality of finished beer.The barley harvest in the field and in the later storage process will be affected by the microorganisms in varying degrees,and the most important of which is the influence of mould.This experiment was taken as an example of Fusarium and Mucor circinlloides to explore the effect of the two on the germination of barley and the metabolic spectrum after germination.1.Before the barley germination is carried out,we can remove the mould microorganisms on the surface of the barley by removing the skin of the barley and removing the bacteria.Then,the effect of malting barley germination was studied by adding different bacteria quantity of Fusarium and Mucor circinlloides(103sum/m L,105sum/m L,107sum/m L).Experimental results show that:Adding 107 sum/m L Fusarium had increased the germination rate.Adding 107 sum/m L Mucor circinlloides had decreased the germination rate.At the same time,the inactivated Fusarium and Mucor circinlloides and the fermentation broth of the two were added to the wet soaking process respectively.Experimental results show that:After inactivation,the inactivated mucor had no effect on the germination of barley,but the fermentation of both of them had a positive effect on the malting of barley.At the same time,The activity of alpha-amylase,beta-amylase,protease,cellulase and oxidoreductase were measured.It is found that it has different promotion or inhibitory effect on enzyme activity.2.Firstly,the GC-MS condition of barley extract was optimized and screened.These include methods of extraction and temperamental warming procedures designed to enable temperament to detect more material.Experimental results show that:Application of the material derivative processing extraction method,and at the same time cooperate with certain temperature program to detect more material,including: alcohols,aldehydes,acids,sugar,amino acid,organic acid and etc.3.The good GC-MS temperament conditions are applied to the detection of samples.It includes the detection of different time temperament of the blank group,the Fusarium and Mucor circinlloides(The initial time of each sample and the temperament detection of five days of germination).The effect of two kinds of mould on the germination of barley was investigated by analyzing the metabolic spectrum.
