Infants and young children represent the nation's new powers,Their growth and development is the common concern of all social people.Therefore,the determination of nutrient contents of infant formula is also a major project.In order to detect the various water-soluble nutrients in infant formula quickly and efficiently,this paper established a method to detect the contents of 13 water-soluble nutrients in infant formula,named liquid chromatography tandem mass spectrometry.The tests included vitamin B1,riboflavin,pantothenic acid,pyridoxine,pyridoxal,pyridoxine,folic acid,niacin,nicotinamide,biotin,vitamin B12,vitamin C and taurine.The main contents and conclusions are as follows:1.Experimental methods:Experiments using 40?deionized water dissolve,and then use 0.1%formic acid solution to extract.After the ultrasound,we use 20%of zinc acetate to precipitate large proteins,the deionized water was fixed to 20 mL,and the centrifuge was removed by 0.22?m filtration membrane filter,the filtrate was separated by a liquid chromatographic gradient elution program,which was separated by ACQUITY UPLC HSS T3?2.1 mm x 100 mm,1.8?m?column.Sample volume was 10?L,the system flow phase A is 0.1%formic acid aqueous solution,and the flow phase B is 0.1%formic acid acetonitrile solution,using the electrospray ion source positive ion mode ESI+,multi-response monitoring mode?MRM?,the analysis time is 10 min.Experiments of various nutrients chromatogram peak shape is good,all nutrients standard curve linear in good condition,the correlation coefficient were greater than 0.99,the relative standard deviation?RSD?standard solution between 0.12%0.27%,relative standard deviation?RSD?of peak area between 0.03%2.27%,the sample of standard addition recovery rate is between 85%110%,relative standard deviation of parallel samples are less than 10%.2.With a single factor test,the temperature and the time to set the time is variable,the best conditions for the formula to be made.The experiment results is the best temperature for the infant formula is 40?.The infant formula powder solution stored at room temperature should be drunk within 1 hour.Under the condition of cold storage,the nutrient content of each nutrient decreases gradually,and it shall be drunk within 24 hours,and shall not exceed72 hours.In the market,the milk powder of different brands of different brands was selected for the detection of water-soluble vitamins,and the error was not more than 2%compared with the label value.3.The experiment simulated the transportation conditions of infant milk powder products.The single factor test was carried out by means of transportation time and temperature.We found that the content of 13 water-soluble nutrients in infant formula powder decreases with the increase of transportation time.With 30%as the maximum loss,the transportation time shall not exceed 21 days.The content of 13 water-soluble nutrients in infant formula powder decreases with the increase of transportation temperature.Results showed that the babies and infants powdered formula the best transportation temperature is25?,the temperature must be lower than 50?.Conclusion:The method of liquid chromatography-mass spectrometry established in this experiment is very reliable for the detection of 13 water-soluble nutrients in various infant formula in the market.This method has high sensitivity,simple operation,accurate and reliable detection results,short analysis time,many kinds of nutrients,and good precision.This method is suitable for food detection.
