Determination And Compartion On Selenium In Beef And Other Three Livestock Meat Of Inner Mongolia

Mostly China lies in Selenium deficiency belt of the global.Food selenium is lightly correslated to the mineral earth abundance effect,and different food bio-derivation has different bio-concentration effect thus food selenium worth a systematic determination and evaluaton.Selenium(Se)content in beef of Inner Mongolia lack systematic data and evaluation.A total of 96 cattle longissimus dorsi and biceps femoris samples were collected from 11 banners/counties of Inner Mongolia from east to west.And 53 sheep,15 bactrian camel and 6 horse meat samples were gathered simultaneously for comparative study.Se was determined by Atomic Fluorescence Spectrometry(AFS)and conducted descriptive statistics and differences test.Generally Selenium level in Inner Mongolian cattle meat is 12.14±6.70(X ±SD,?g/100 g,N=96),and meat Se level of east part of Inner Mongolia is lower than western area.Se in beef of Hulun buir Ewenke Banner was 4.93±3.66,significantly lower than that of other banners and counties,even could be used as a geographical origin marker.Se in beef of Bairin right banner 12.84±7.13,Sonid left Banner 11.55±4.40,Sonid right Banner 13.62±6.60,Si Zi Wang Banner 10.69±4.74 and south suburbs of Hohhot 13.56±7.10,no significant difference among these origins;while Wushen Banner 16.20±6.71,the most west origin of this study was the significantly highest,Beef Se was 3.3 times higher than that of the most east Ewenke Banner,and high 19%~52% then remaining origins.Se of grazing cattle meat seems slightly higher than confined raisin,however no statistical significance;and no significant difference observed among age,gender(cow vs castrated bull),and season.Se of camel,horse and cattle meat was significantly higher than that of sheep meat.Se of horses,beef and sheep meat that originated from Ewenke Banner were 7.29±3.86,4.93±3.66 and 1.41±0.57 respectively,Se of big animals were 3.5 and 5.2 time higher than that of sheep.Talking to horse meat,Se was 13.42±0.58 and 7.29±3.86 respectively to western Damao Banner and most eastern Ewenke Banner,there was 1.84 times difference.
