Sargassum fusiforme which has a wide range of growth,large biomass,high nutritional and medicinal value is one of the economic algae in China.The main problems in Sargassum fusiforme industry are the low comprehensive utilization rate,low degree of processing,and narrow application range et al.This study selected Sargassum fusiforme as the main material to analyze its nutritional components,and to optimized the extraction process of Sargassum fusiforme polysaccharides(SFPS).What's more,a kind of Sargassum fusiforme compound drink was developed in order to provide some theoretical basis for the high-value utilization of Sargassum fusiforme.The main research contents and conclusions were as follows:1.The main nutritional ingredients of Sargassum fusiforme was analyzed.The routine nutritional ingredients,amino acids and fatty acids in the Sargassum fusiforme were determined and analyzed with reference to the national standard and related references.It was indicated from the nutritional ingredient that the content of moisture in fresh Sargassum fusiforme was 83.16%,the contents of carbohydrate,crude protein and the crude fat in dry base were 45.77%,6.05% and 0.74%.In addition to tryptophan,16 kinds of amino acids were detected in Sargassum fusiforme,among them,the propotion of flavor amino acids of total amino acids was 49.73%,the ratio of essential amino acids to nonessential amino acids was 81.84%,and the composition ratio was consistent with the standards of high quality protein.There were 14 kinds of fatty acids detected in the oil of Sargassum fusiforme.The PUFA was 36.82% of the total fatty acid content,and the AA accounted for 20.82% of the total fatty acid content,EPA was 5.17% of the total fatty acid content,and LA and ALA were 10.83% of the total fatty acid content.Sargassum fusiforme has a rich nutritional value.2.The extraction technology of polysaccharides from Sargassum fusiforme was optimized through compound enzyme hydrolysis.Taking the Sargassum fusiforme as raw material,the yield of polysaccharides was used as an index,this paper compared the extraction effect of SFPS extracted by water extraction,single enzyme hydrolysis and compound enzyme hydrolysis.Through the single factor experiment,the effects of the ratio of solid to liquid,the ratio of complex enzyme,the amount of enzyme,the pH of the system,the temperature of enzymolysis and the time of enzymolysis on the extraction rate of SFPS were investigated.The orthogonal test was used to optimize the extraction conditions of SFPS.The results showed that the compound enzymatic extraction of SFPS had many obvious advantages.The optimum technological conditions were as follows: the ratio of solid to liquid was 1:40,the ratio of complex enzyme was 1:1,the pH was 4.0,the amount of complex enzyme was 6%,the enzymolysis temperature was 50 ?,the enzymolysis time was 90 min,and the extraction rate of SFPS under this condition was(8.70±0.25)%,which is 1.95 times of the water extraction method.What's more,the extraction time was shortened 62.5%.3.A part of producing technologies of Sargassum fusiforme polysaccharides compound drink were optimized.Using the polysaccharide solution of Sargassum fusiforme as the raw material,the deodorization process of the polysaccharide solution of Sargassum fusiforme was optimized by compound deodorization method.The effects of concentration of deodorant,temperature and time on the deodorization of polysaccharide extract from Sargassum fusiforme were studied.Combined with practice,the orthogonal experiment of compound deodorization was carried out on the basis of single factor test.The results showed that the deodorization effect of the polysaccharide extract was the better under the conditions of 0.6% green tea powder,4% ?-cyclodextrin and water bath 120 minutes at 65 ?.By adjusting the ratio of the polysaccharide extract and carrot juice,the sugar concentration and the amount of lemon juice added,the optimum formula of the compound drink of Sargassum fusiforme polysaccharides was determined as follows: the ratio of the SFPS extracts and carrot juice was 2:5,the sugar concentration was 25 g/L,the amount of lemon juice was 5 mL(per 100 mL ratio liquid).Taking the blended polysaccharide compound drink as the research object,three stabilizers were selected to optimize the compound stability test.The results showed that the optimum dosage of composite stabilizer was 0.15% xanthan gum,0.01% sodium carboxymethyl cellulose and 0.03% carrageenan.The research provided the basic theory and basis for the processing and utilization of Sargassum fusiforme polysaccharides,and it had certain significance in the deep processing and utilization of Sargassum fusiforme.
