E'jiao Cake(trade name:Taohuaji E'jiao Cake)is a kind of healthy food made of E jiao as the main material,black sesame,walnut and yellow wine as auxiliary materials.Paper first studies on the nutrients and antioxidant capacity of the E'jiao cake.The results are as follows:Part ?.Evaluation of nutrient composition and antioxidant capacity of E'jiao CakeThe nutrients of the E'jiao cake were determined by liquid chromatography,gas chromatography and the antioxidant capacity was determined in vitro by ABTS free radical scavenging method,DPPH free radical scavenging method,hydroxyl radical scavenging method,superoxide anion radical scavenging method and reducing ability method.The results showed that in addition to containing a certain amount of essential amino acids and polyunsaturated fatty acids,there were 188.99mg iron and 125.32mg zinc,which are related to skin improvement,and 312.32mg vitamin E and 210.32mg vitamin C per 100g E'jiao Cake;In terms of antioxidant capacity in vitro,E'jiao cake can scavenge ABTS free radicals and DPPH free radicals effectively.When the E'jiao cake concentration was 1.0 mg/mL,the scavenging ability were 99.99±4.365%and 90.88±7.02%,respectively.Part ?.Effect of E'jiao Cake on oxidative defense system in aging miceThe aging mice were treated with E'jiao Cake and vitamin E by intragastric gavage.Activities of superoxide dismutase(SOD),catalase(CAT),and glutathione peroxidase(GSH-Px),as well as levels of malondialdehyde(MDA)in serum and liver were determined.It was found that E'jiao increase the antioxidant enzyme activity and inhibit the lipid peroxidation process in aging mice significantly.In order to explore the mechanism of the antioxidative effect of E'jiao cake,it is necessary to study further on the function of the components.Since other ingredients are all common food,the main material E'jiao(Colla corii asini)is further studied.The contents and results of this part of the study are as follows:Part ?.Protective effect of Colla corii asini on oxidative stress induced by Acrylamide(AA)in zebrafish embryos and gene expression related to Keapl-nrf2/ARE pathwayThe oxidative stress zebrafish embryo model was established and treating them with Colla corii asini.It was found that Colla corii asini effectively inhibited the level of reactive oxygen species(ROS)produced by AA stimulation,increaseed the activity of antioxidant enzymes,and up-regulate the mRNA expression of nrf2,key factor in Keapl-nrf2/ARE pathway as well as its downstream antioxidant enzymes and phase II detoxification enzyme genes.
