Red sweetpotato,purple sweetpotato and jicama are the tropical and subtropical crops,which are very sensitive to temperature.When the storage temperature is too low,the potato chunks will suffer from chilling damage,and eventually spoilage.When the temperature is high,the tubers have strong respiratory metabolism and severe nutritional loss,which are not good to storage quality.In order to solve the problems of chilling injury and mildew in potatoes storage,fresh red sweetpotato,purple sweetpotato and jicama were used as materials to study the effect of different temperature,different control atmosphere and different package on storage quality.And measure the change of nutritional quality indicators and physiological indicators after TBZ fumigation treatment.Results are as followings:1?14? are the best temperature of sweetpotatoes and jicama in different temperature storage.No chilling injury occurred at 0 ? and 10 ? storage.When stored at 0 ? for 20 days,the surface of the tuber was hollowed and showed watery stains and then started to rot.After 60 days of storage,the cell membrane permeability of red sweetpotato,purple sweetpotato and jicama reached 44.56%,42.47%,53.78%respectively.The tubers of all potatoes were all rotted and metamorphosed after 80 days' storage.When stored at 10 ?,the surface of tubers shrank and the internal tissues were browning and smelling,and lignification appeared on both ends of red sweet potato.Although no chilling injury occurred at 20 ?,the quality indexes such as starch contents and Vc contents decreased rapidly and the nutrients loss was large.When stored at 14 ? for 80 days,no injury was founded,and the quality indicators of the potatoes were all good.2?0.03 mm PE are the best storage packing material of sweetpotatoes and jicama in the different packing test.0.03 mm PE,0.03 mm PVC,0.03 mm KDM package can inhibit the increase of weight loss rate,malondialdehyde contents of red sweetpotato,purple sweet potato and jicama,and control the activity of polyphenol oxidase and peroxidase,reduce the loss of starch contents and Vc contents.The weight loss rate,malondialdehyde contents,PPO activity and POD activity of sweet potatoes and jicama were the lowest when used PE package during storage,and the contents of starch and Vc decreased at a lowest level.3?Different CA storage tests showed that the gas composition of 8%O2+5%CO2 was the best storage parameters for red sweetpotato and purple sweetpotato,and the optimal gas parameters were 2%O2+5%CO2 of jicama.Under the condition of 8%O2+5%CO2,the quality indexes of red sweet potato and purple sweet potato were significantly higher than those of CK and other modified atmosphere groups.During the storage period of 80 days,the contents of soluble solid was increased and higher than other groups,the starch contents decreased by only 18.79%from the initial value,and decreased by 21.12%when compared with the 2%O2+5%CO2 treatment group.The quality indexes of the jicama under 2%O2+5%CO2 gas condition was better than other groups,and tubers were not founded brown phenomenon and peculiar smell.4?5g/m3 TBZ fumigation treatment of red sweet potato,purple sweet potato and jicama can inhibit PPO activity,and inhibit cell membrane permeability,weight loss rate increases,and reduce the loss of nutrients such as starch,Vc,and maintain higher soluble solids contents.After 80 d,the surface of tubers were not mildew,and internal tissues were not lignification and browning.
